The cheese must be mozzarella di bufala campana made with the milk from buffalo raised in the area of Campania and Lazio. Fior di latte cheese is also accepted for this recipe. There are also some rules about making the dough, but they are easier to achieve. The dough is always fat-free and sugar-free and it must be kneaded by hand, but you know I can menage that 🙂 You see, I would make it for you but for now it’s not just about my oven #
