When I don’t feel like cooking but still want to feed my family something warm and cozy… this is the move. 6-8 chicken thighs (seasoned to your liking) • 2 cups uncooked rice • 1 can cream of mushroom soup • 2 ½ cans milk (use the soup can for measuring) • 1–2 cups chopped broccoli (optional) • 1 cup shredded cheese • Seasonings of choice (for chicken and rice) Instructions: 1. Preheat oven to 375°F. 2. In a bowl, mix rice, cream of mushroom soup, milk, broccoli, cheese, and your favorite rice seasonings. 3. Pour mixture into a greased casserole dish. 4. Place seasoned chicken thighs on top. 5. Cover with foil and bake for 1 hour 15 minutes to 1 hour 30 minutes, until chicken is cooked through and rice is tender. 6. Let it rest for a few minutes, then enjoy!
