The process takes hours of boiling chicken bones & cartilage till it’s so tender you can blend everything seamlessly into a this smooth, flavourful collagen rich soup. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m always amazed at how different regions of Japan have their own style of ramen. Today I was able to get a taste of Osaka Japan with a new fusion twist in Beverly, California. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chicken Gyoza 🥟 - 8/10 $6.25 Paired with a bit of yuzu pepper on the side, jt was a tasty classic with a citrus note that went well with ramen. My friend ordered 4 plates to share!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The Original Ramen 🍜 - 7/10 $15.75 The chicken chasu was SO TENDER. This changed my mind about ramen always having to be pork based. The soup was seasoned so well & had a rich flavour. The foamy soup was a pleasant touch! It set a really good standard. I can appreciate the chicken being 100% local. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The Dandan 🔥 - 9/10 $16.75 If you like it spicy & nutty, you’ll love this one. It’s not often you find a Chinese flavour inspired ramen option at a Japanese ramen shop, so this was fun to eat. I had a few bites from my friend’s bowl. I’d come back to have my own bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ The Lemon Butter 🍋- 8/10 $16.75 I felt sooo bougie eating this. The presentation of the fresh lemon slices & the butter was so aesthetically pleasing to look at. Refreshing & rich 🙌🏻 Adding a touch of truffle oil really elevated this ramen to the next level. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I won’t lie, ramen isn’t usually my first choice of noodle soup, however, this place has reignited a new way to experience ramen for me.
