Vegetarian mofongo!! I used rice paper bacon instead of chicharrones and here’s the recipe: mix coconut aminos/soy sauce, sesame oil, sriracha and honey for your marinade. Soak the rice paper in a shallow dish with warm water for about 30 seconds to make it pliable. Then coat each side of the rice paper in your marinade. Transfer the rice paper to a skillet on medium heat. After a couple minutes flip it over. Make sure it’s nice and crispy on both sides, and voila!
