Ingredients  Dough 1.25 cups flour 1 cup blended cottage cheese 2 tablespoons maple syrup 1.5 teaspoons baking powder Other ingredients 1/4 cup sugar 1/2 tablespoon cinnamon 1/4 cup melted butter 1/4 cup brown sugar 1 tablespoon protein powder Frosting 2 tablespoons of cream cheese, softened ¼ cup blended cottage cheese 1 tablespoon maple syrup Instructions  Preheat the oven to 350ºF Make the dough: add the flour, blended cottage cheese, maple syrup, and baking powder to a bowl and mix to combine. Once combined, knead the dough into a ball. You’ll know the dough is ready if you poke the dough and it bounces right back. Cut dough into 1/4 pieces and toss into a large zipper bag Mix together sugar and cinnamon. Toss into bag with the dough pieces and shake until evenly coated. Pour into a sprayed bundt pan. Mix together melted butter,  brown sugar, and protein powder. Pour over dough. Bake at 350 for 20 minutes. If you double the recipe you may need to cook it longer. Make the frosting: While the monkey bread is baking, add all the ingredients to a bowl and use an electric mixer to mix the ingredients together. Be sure the cream cheese is softened or you will end up with lumpy frosting. Flip over bundt pan, let cool before drizzling on frosting #monkeybread #cottagecheeserecipe #breakfastrecipes

Ingredients: * 1 lb ground lamb * 2 tablespoons olive oil (or avocado oil) * 1 onion, finely chopped * 2 garlic cloves, minced * 1 bell pepper, chopped * 1 zucchini, chopped * 1 cup spinach (optional) * broccoli (optional) * 2 tablespoons coconut aminos (or tamari sauce for a gluten-free option) * 1 tablespoon lemon juice (I juiced an entire lemon) * Salt and pepper to taste * Fresh herbs (such as parsley or mint), chopped for garnish Instructions: 1. Cook the Lamb: Heat a large pan over medium heat. Add 1 tablespoon of olive oil and then add the ground lamb. Break it up with a spoon as it cooks, stirring occasionally. Cook for 5-7 minutes until browned and cooked through. Remove excess fat if necessary, and season with salt and pepper. Transfer to a plate and set aside. 2. Sauté Vegetables: In the same pan, add the remaining tablespoon of olive oil. Add the onion and garlic, cooking for about 2-3 minutes until fragrant and soft. 3. Add the Veggies: Add the bell pepper, zucchini, and spinach (if using) to the pan. Recipe didn’t call for broccoli, but I wanted it so I added it. Stir-fry for about 5 minutes, or until the vegetables are tender. 4. Combine and Season: Return the cooked lamb to the pan with the vegetables. Add the coconut aminos (or tamari) and lemon juice, stirring to combine. Cook for another 2-3 minutes to heat everything through. 5.
