Authentic Cuban Ropa Vieja w/ @Alex Rios 🇨🇺🔥 recipe ⬇️ Meat 2 pounds flank steak 1 large yellow onion thinly sliced 1 of each large green and red bell pepper, thinly sliced 4 cloves garlic minced 2 tsp dried oregano 2 tsp ground cumin 2 tsp paprika 2 tsp salt 1/2 tsp black pepper 1/2 cup dry white wine 1 cup beef broth 16 oz tomato sauce 6 oz can tomato paste 2 bay leaves Cut your flank steak into 4-5 inch chunks. Season with salt and pepper. In a pot on medium high heat, sear on all sides. Remove from the pot and sauté onions and peppers for 2-3 minutes. Add garlic and once fragrant add tomato paste along with all seasonings. Cook down for 2-3 minutes. Deglaze with white wine and let most of it evaporate. Pour in tomato sauce & beef broth along with salt to taste & bay leaves. Add meat back in. Pressure cook for 40-45 min. Once done, shred and add back to the sauce. Sweet Plantains (Maduros) 2-3 ripe plantains Avocado oil spray Slice diagonally 1/2 inch. Thoroughly spray with oil, air fry 380F for 5 min, flipping occasionally. Air fry again 400 for 5 min until golden brown.
