#CAWalnutsPartner #Sponsored 2 tbsp olive oil 1 onion, diced 3 cloves of garlic 1 can of chickpeas, drained and rinsed 1 tbsp ground flax 1 cup California walnuts 1/2 cup cilantro, chopped 1/2 cup parsley, chopped 3 tbsp flour (I used oat) 1 tsp salt 1 tsp pepper 1 tsp cumin 1/2 tsp onion powder 1/2 tsp garlic powder More olive oil for pan frying 1/2 cup marinated cherry tomatoes & cucumber 1/4 cup lemon tahini sauce 2-3 Wraps of choice To get started, heat a large skillet on medium-high heat. Add in the oil, onion, and garlic. Saute for 5-6 minutes or until golden brown. Set that aside while you prepare the other ingredients. In a food processor or high-speed blender, add the chickpeas, ground flax, and California walnuts. Pulse until a dough forms. I like some texture but you can process until smooth if you prefer! Place the walnut mixture in a mixing bowl. Add the sauteed onion and garlic, chopped herbs, flour, and seasonings to the bowl and mix until evenly combined. The dough should hold together when pressed and molded. Make dough balls with your hands and set aside. You can prep these ahead of time and place in the fridge until you are ready to cook! Heat a large skillet on medium-high heat and add in the oil. Once the oil is hot, add the falafel balls into the oil with space between each one. Cook on medium for about 2-3 minutes each side or until golden brown. Once all are cooked, serve in the wrap and enjoy!
