Introducing my build-a-bite salad 🥗 🛒 INGREDIENTS: •Romaine lettuce – base layer, chopped •Spring mix lettuce – mix with romaine for volume + texture •Mushrooms – sauté in a splash of avocado oil until golden •Cherry tomatoes – sliced in half •Red onion – very thinly sliced so it doesn’t overpower •Kalamata olives – pitted + sliced in half •½ avocado – sliced (adds the creamy bite) •Red bell pepper – chopped for crunch and a splash of flavor •Small cucumber – sliced for hydration + texture •Feta cheese – sprinkle for tangy creaminess •Protein of choice – I used shredded rotisserie chicken breast •Dressing – Primal Kitchen balsamic with avocado oil (super light, fresh & clean) •Salt & pepper – essential for flavor layering 🥣 THE TECHNIQUE: 1. Start with a large, round, flat bowl — this changes everything. The shape lets you lay ingredients next to each other without crowding. (Mine’s linked in my Amazon kitchen list.) 2. Lay down the lettuce first — half romaine, half spring mix. 3. Place each ingredient in its own section around the outer edges of the bowl. Think: color wheel vibes. 4. Season with salt and pepper right over the top. Let it sit a few minutes — this draws out flavor and softens raw veggies like onion. 5. Drizzle dressing over everything — just enough to lightly coat. 6. Add your protein LAST, right in the center (close enough to grab with every bite) Don’t mix it!!!. You grab a little from each section with your fork so every bite is different 😍
