Give me a 30 minute meal any day of the week! This “Balsamic Chicken & Veggies” from Mel’s Kitchen Cafe is out of this world delicious! AND all four of my kids inhale it. 🥦🫑 ✨Balsamic Chicken & Veggies✨ * 2 small zucchini, cut into 1-inch pieces * 1 - 2 small yellow squash, cut into 1-inch pieces * 1 bell pepper, cut into 1-inch pieces * 1 red onion, cut into 1-inch pieces * 1 head of broccoli, cut into pieces * 2 boneless skinless chicken breasts, cut into thin strips * ⅓ c balsamic vinegar * 3 Tbsp avocado oil * 1-2 Tbsp honey * 1 tsp dried basil * ½ tsp dried oregano * 1 tsp salt * ½ tsp pepper Preheat the oven to 400° F. Put all cut veggies and chicken strips on sheet pan. Mix the rest of the ingredients in a bowl. Pour over veggies/chicken. Toss everything together until evenly coated. Bake for 12-15 minutes until the vegetables are soft and chicken is cooked through. Serve with rice, quinoa, or pasta. Easy Beef Enchiladas . 1 lb Ground Beef 2 10oz cans Enchilada Sauce 1 1/2 cup Shredded Cheese 10 Flour Tortillas . Preheat oven to 375 degrees. Cook ground beef in a skillet over medium heat, drain fat. When browned, stir 3/4 cup of the enchilada sauce and 1 cup of cheese into the beef. Add a few large spoonfuls to each tortilla and roll up. Add to a greased baking dish, top with remaining sauce and cheese. Bake for 15-20 minutes. Served simply with rice and spring mix, a balanced and flavorful recipe that’s ready in no time. #veganrecipes #30minutemeals #tofurecipes  Here’s the full recipe! ingredients 1 block super firm tofu, frozen, thawed, and pressed 1 tablespoon and 1 teaspoon smoked paprika, divided salt and olive oil, as specified below 2 to 3 heaping tablespoons corn starch 2 medium shallots, finely chopped 1 red bell pepper, cored and finely diced 8 to 10 cherry tomatoes, halved 4 cloves garlic, minced homemade cashew cream (1 cup cashews + 2 cups boiling hot water + 1 tablespoon nutritional yeast + juice of 1 lemon + 1 pinch salt; add everything to a blender and blitz until creamy) 1 cup vegetable broth cooked brown rice, spring mix w/ vinaigrette, and chives for serving preparation begin by getting your brown rice going on the stovetop in a separate pot. break tofu into craggy 1.5-inch pieces and add to a bowl w/ 1 tbsp smoked paprika, 1/2 tsp salt, 3 tablespoons olive oil, and the corn starch. mix together with your hands. add tofu to a pan over med-high heat with 2 tbsp oil. once oil is heated, add the tofu and cook 4 to 5 mins, flipping the pieces once every minute or so to ensure even browning. remove tofu from pan, add another 1 tbsp oil, and then the shallots, red bell pepper, and remaining 1 tsp smoked paprika, stir in and cook down 2 to 3 mins. add the tomatoes and cook 1 min. add the garlic and stir in 30 seconds. pour in the cashew cream and mix until the sauce turns a light orange color. pour in veg broth and stir in. you can use an immersion blender at this point to blitz the sauce, but no worries if you don’t. serve the tofu alongside cooked brown rice and spring mix, finish with the sauce and chives, and dig in.

Cantonese-Style Steamed Fish Ingredients * 2 7oz white fleshed fish fillets(Chilean Sea Bass is my fav) * Salt * Shaoxing wine * 1 large knob ginger * 5 scallions * 2 tbsp light soy sauce * 1.5 tsp sugar * 1 tsp sesame oil * 3 tbsp warm water * 3 tbsp neutral oil Instructions 1. Season fish with salt and lightly drizzle Chinese cooking wine over the fish.  2. Peel and julienne ginger as thin as possible and slice a few pieces to lay on the bottom of the plate. 3. Cut scallions into 3 inch segments. Save 4-5 segments for the bottom of the plate and thinly slice the rest lengthwise. 4. Add the sliced ginger and scallion segments to the bottom of a plate and place the fish on top. 5. Steam the fish for 10-12 minutes on medium heat while you make the sauce by combining soy sauce, sugar, sesame oil, and water. 6. Remove the fish draining out all of the liquid and add the julienned ginger and scallions on top. 7. Pour the sauce over the fish and heat oil right before it starts to smoke. 8. INGREDIENTS: 1 cup roughly chopped marinated artichokes 1/4 cup chopped capers 2 rounds of garlic & herb Boursin 2 cloves of garlic, minced 1/4 cup dry white wine (I used Chablis) 1 tbsp good olive oil 1 sp dried thyme Juice + Zest of 1 lemon (plus more zest for garnish) 1/2 tbsp Kosher salt Black pepper 8 oz Spaghetti Fresh parsley or thyme, for garnish Freshly grated Parmesan, for garnish DIRECTIONS: Preheat oven to 400 degrees F Place boursin cheeses, capers, artichokes, garlic, white wine, lemon zest + juice, olive oil, thyme, and salt in a 9x13 baking dish – and bake uncovered for 30 minutes While Boursin is baking, boil spaghetti until Al dente, making sure to reserve about 1/4 cup of pasta water in the event sauce is too thick Remove Boursin from the oven after 30 minutes, and stir well. Strain spaghetti, then using tongs, place spaghetti into the Boursin artichoke mixture and make sure all is well incorporated Serve immediately! Top with fresh Parmesan, lemon zest, black pepper, and parsley or thyme for some lovely green. HEALTHY CHICKEN ALFREDO BAKE ❤️💪🏼😋 Don’t get me wrong, l’m all about enjoying the holidays but I think l’ve had a dozen cookies in the last week 😂 I was needing some vegetables and this was family friendly way to do it! I’m not positive but I think with a few tweaks this could be gluten free, diabetic friendly, maybe even keto. 😋  RECIPE: dice two chicken breast and season with your favorite blend! Sear for a few mins in a hot skillet. Add chicken, 24 oz of cauliflower, a jar of Alfredo sauce and any other seasoning. Mix together and sprinkle with Parmesan cheese. One of my FAVORITE pasta dishes, inspired by the classic Spaghetti Aglio e Olio! ✨ So simple, so flavorful, and absolutely DELICIOUS! 😍🍋🧄 Ingredients: 	•	1 lb spaghetti 	•	1 tbsp chicken bouillon 	•	1 bundle fresh parsley, chopped 	•	Several cloves of garlic, thinly sliced 	•	1/4 cup olive oil 	•	1 tbsp red chili flakes 	•	2 tsp Britt’s Cookin’ Garlic & Herb seasoning 	•	1 lemon, juiced 	•	Freshly grated Parmesan, to taste Instructions: 	1.	Bring a pot of water to a boil and add the chicken bouillon for flavor. Cook the spaghetti until al dente, reserving some pasta water before draining. 	2.	While the pasta cooks, chop the parsley and thinly slice the garlic. 	3.	Heat olive oil in a large skillet over medium heat. Add garlic, chili flakes, and Brit’s Cookin’ Garlic & Herb seasoning. Cook until the garlic is lightly golden, being careful not to let it burn. 	4.	Add the cooked spaghetti directly to the skillet, along with a splash of the reserved pasta water. Toss until the spaghetti is evenly coated in the garlic oil. 	5.	Turn off the heat and mix in a handful of chopped parsley, lemon juice, and a generous sprinkle of Parmesan. 	6. You will need: 2 chicken breast package 2 lemons/ one sliced and 1/2 for the juice 1/2 cup white wine like chardonnay 2 cloves of garlic 1/4 cup of olive oil 45 g unsalted cold butter 2 extra large eggs 1/2 cup all purpose flour plus two more tablespoons 1 3/4 cup low sodium chicken stock  2 tbsp finely chopped Italian parsley Salt and pepper to taste Preparation: Start by prepping the the garlic, chop very finely and set aside. slice one lemon into relatively thin slices and cut another in half. Chop a handful of parsley very finely, set aside. Slice each chicken breast in two and use a mallet to flatten the chicken breast and make it even. You’ll end up with 4 good size chicken breasts and a meal enough for 4 people. Whisk the eggs and season with salt and pepper. Season the flour as well with salt and pepper. Dunk the chicken in the flour and cover all sides then dip in the egg mixture. Add the 2-3 tbsp of olive oil to a cast iron pan and let it become hot enough before adding the chicken breast. Do not over crowd the pan, cook for 2-3 minutes on each side. Add more oil if needed before you cook the other two. When you finish cooking the chicken, add the garlic then the wine. Let the wine reduce in half then add 1 cup of chicken stock, the lemon slices and lemon juice. Mix the flour and the rest of chicken stock, add on top of the sauce to thicken. Adjust the seasoning and finish with the cold butter. Whisk it and put back the chicken and let it simmer for 5 minutes. Blood oranges are my absolute fav. They have very similar sweetness to an orange, but with an almost equally tangy/sour note. The flavors and textures of orange chicken are all here. Such a fun recipe and perfect for any weeknight meal. ingredients 1 block firm tofu, frozen, thawed, pressed, and cubed into 32 pieces 3 tablespoons plus 2 tablespoons soy sauce, divided 3 tablespoons maple syrup 3 tablespoons plus 1/4 cup rice vinegar, divided 2 tablespoons plus 2 teaspoons sesame oil, divided 1 tablespoon sriracha 2/3 cup plus 2 tablespoons cornstarch juice of 2 small blood oranges plus zest of the blood oranges 4 to 6 garlic cloves, peeled and grated 1 2-inch piece ginger, peeled and grated 1 Fresno chili, seeded and finely diced 1/2 cup plus 2 tablespoons water 3 tablespoons grapeseed oil 1/4 cup organic sugar cooked rice, avocado puree’, scallions, and sesame seeds for serving prep add the tofu to a storage container with 3 tbsp soy sauce, maple syrup, 3 tbsp rice vinegar, 2 tbsp sesame oil, and 1 tbsp sriracha. place a lid on and shake until the tofu is coated with the wet ingredients. open container and add 2/3 cup cornstarch. place lid back on and shake until all pieces are well-coated (add more cornstarch if still wet after dredging). set aside. add blood orange juice + zest, garlic, ginger, Fresno chili, 2 tbsp soy sauce, 1/4 cup rice vinegar, 2 tsp sesame oil, and 1/2 cup water to a large mixing bowl and whisk together. set aside. place a pan over medium high heat and allow to warm 2 mins. add 3 tbsp grapeseed oil to the pan, warm 1 min, then add all the dredged tofu. cook tofu on all sides until crispy golden brown about 6 to 8 mins (cook longer if necessary to achieve desired crispiness). remove tofu and add sauce to the pan. bring up to a strong simmer. stir 2 tbsp cornstarch together with 2 tbsp water. pour the slurry in and whisk together. add 1/4 cup sugar and whisk further. cook down 3-4 mins, then add tofu back to the pan and cook until all tofu is coated and crisp. serve up and dig in 🙏  #veganrecipes #30minutemeals #veganuary
