Tomato Arugula Omelette I love the combination of Tomatoes and eggs together! There's something about their combination that just makes every meal special. Whether it's a fluffy omelette, a hearty shakshuka, or simply sliced tomatoes alongside cooked eggs, I can't get enough of this duo. The flavors blend so beautifully, creating a satisfying dish every time. āIngredientsā 2 tablespoons butter 1 cup cherry tomatoes halved 1/2 teaspoon salt 1/2 teaspoon black pepper 4 eggs whisked Shredded Mozzarella Cheese as much as you want Arugula as much as you want 1. Melt butter in a nonstick skillet over medium heat. Add in the tomatoes, season with salt and pepper and cook for 3-5 minutes. 2. Whisk the eggs and pour over the tomatoes, swirl over the tomatoes until evenly distributed. 3. Sprinkle cheese on top, cover the skillet and cook over medium-low heat until eggs begin to set and the cheese melts. 4. Add the arugula to one half of the omelette, use a spatula fold the other half over the omelette. Transfer to a plate and enjoy!
