If you ask my kids, what was their favorite dish growing up? Arroz Chaufa would top the list! Comfort food and oh, sooooo good! We’ve been known to eat it right out of the big metal serving dish it was meant to be served from! LOL! Save leftover rice from the night befoe. You need to start with cold, cooked rice for this recipe Arroz Chaufa 2 Tlbs sesame oil 1 bunch green onions, chopped 1 red or green bell pepper, chopped 2 hot dogs, chopped 1/2 cup smoked sausage (optional), cut in bite-sized pieces 2 eggs, beaten 2-3 garlic cloves, minced 1/2 Tablespoon ginger root, finely chopped 1 cup cooked chicken, diced 4 cups cold, white rice, pre-cooked 3 Tlbs soy sauce Preheat large skillet to medium heat. Add sesame oil. Add hot dogs, onions and bell pepper, garlic and ginger. Saute for 2 minutes. Slide mixture to the side and add beaten eggs to empty side of skillet. Use a spatula and scramble eggs. When eggs are cooked, combine with veggie mixture. Add rice and chicken to skillet. Stir to combine. Pour soy sauce over top of all ingredients and toss thoroughly until fully heated and combined into one mixture. Serve!
