BAKED RICOTTA DIP🧀🍅 Ring in the new year with this easy, cheesey appetizer! INGREDIENTS: -1 pint of grape tomatoes -2 tbsp extra virgin olive oil -1 tsp minced garlic -Salt and pepper -15 oz ricotta cheese -1 egg -Juice of half a lemon -1 cup shredded mozzarella cheese -1/2 tsp dried parsley -1/4 tsp red pepper flakes -1 tbsp chopped fresh basil -Grated parmesan cheese -Dippers of choice. I used pita chips and celery. DIRECTIONS: 1. Add grape tomatoes, olive oil and minced garlic to a casserole dish. Combine well. 2. Season tomatoes with salt and pepper. 3. Place in oven and roast for 30 mins at 400F. 4. In a mixing bowl, combine ricotta cheese, egg, lemon juice, shredded mozzarella cheese, dried parsley, red pepper flakes and mix well. 5. Remove dish from oven and turn down to 350F. 6. Spread ricotta cheese mixture on the bottom of a freshly greased casserole dish. 7. Top the ricotta with the previously baked garlic roasted tomatoes. 8. Top with fresh chopped basil and grated parmesan cheese. 9. Bake at 350F for 20-25 mins. 10. Serve dip immediately with dippers of choice.
