COTTAGE CHEESE EGG SALAD 🥚🌱 INGREDIENTS: 4 hard-boiled eggs 1/2 C cottage cheese 1/4 C red onion, chopped 1-2 TBSP. mustard Fresh parsley, chopped Fresh dill, chopped Salt & pepper, to taste DIRECTIONS: 1. Peel the eggs and cut them in half lengthwise. Remove yolks from two of the four eggs. 2. Chop two eggs and two egg whites and transfer to a medium mixing bowl. 3. In a food processor, add cottage cheese, mustard, and the two reserved egg yolks and process until smooth. 4. Add the blended mixture to the chopped eggs and add the chopped onions, parsley, dill, salt and pepper. 5. Mix with a spoon or a rubber spatula until combined. 6.
