My friend Matt wanted to BBQ a duck and I thought it would be great for him to cook it on the Searwood and try the rotisserie. We even got a great workout pushing the Searwood 600 XL around the block to his house so I could watch him make it happen. It was so worth it! It’s super mesmerizing watching the Rotisserie gently rotate the duck above the cooking grate. The duck cooked evenly and turned out super pretty, self-basting during the spinning process while BBQing. I can’t wait to do more rotisserie cooking very soon! Ingredients: 1 4-5 pound duck 1 tablespoon salt ½ cup brown sugar ¼ cup garlic powder BBQ Rub Steps: Dry brine duck with salt, brown sugar, and garlic powder, focusing on meat under the skin, for 3 days Score duck and season generously with your favorite BBQ rub Set up the Rotisserie and BBQ at 275-325 degrees until the internal temp reaches 155 degrees. Rest and Carve however you like
