RECIPE: 400 grams bread flour (I used all purpose)  100 grams active starter 200 grams water 20 grams honey 20 grams of olive or avocado oil 8 grams salt Mix well and let rest 1 hour. Stretch and fold, rest an hour and stretch and fold again. Next hour stretch, fold and shape into a loaf and place in a loaf pan. I use parchment paper to line mine. Cover and place in the fridge for at least 3 hours or overnight. The next day, let it rest on the counter and double in size - about 3-4 hours. Preheat oven and bake at 375 for 35 minutes. I placed another loaf pan on top to help create steam and keep in the moisture! Remove top and brown to your liking.  Let it cool completely and slice! Replying to @Gh the key here is making sure to feed it well before it goes in the fridge for a long period of time. Then, when you take it out do some back to back feedings to help revive it before baking. For example I would take it out in the morning and starting with only 5g of starter, feed 25g of water and 25g of flour. This is considered a 1:5:5 ratio. Leave on the counter for 12 hours, discard back down to 5g then feed again. And repeat for at least 4 feeds.
