Place a lightly greased cast iron skillet over medium high heat. Cheddar Herb Sourdough by @cookim_mama 🧀🌿 This was a fun one to make – recipe below! 280g white bread flour 20g khorasan flour 240g water (80% hydration) 60g peaked sourdough starter (20% levain) 7g salt (2%) 50-60g cheddar cheese cubed (~18%) dried herb blend (basil, oregano, parsley) unmeasured 1. Prepare your starter the night before 2. The next morning, mix the flour and water (reserving 20g of water for step 3). Autolyse for at least 1hour or until your starter is ready 3. Add the levain. Mix. Add the salt and remaining water. Mix and perform slap and folds until the dough is smooth and everything is well combined 4. Cover and let the dough rest for 30mins. Then give the dough 2 sets of stretch and folds, each ~30-45mins apart 5. Laminate the dough to incorporate the cheese and dried herbs 6. Continue to bulk ferment and perform coil folds roughly every hour until the dough is ready (I did 2 rounds) 7. Shape the dough and place it into a banneton. Cover and place it into the fridge for an overnight cold proof. Mine was 16hrs 8. The next morning, score and bake at 500F for 20mins in a dutch oven with the lid on, 22mins at 450F lid off (times may vary based on the size of your loaf). Recipe below and on my website www.miciamammas.com Homemade Bread Ingredients (serves 6 to 8) 3 Cups 00 Flour 1 tsp. Salt 1 Packet of Rapid Rise Instant Yeast 1 ½ Cups of Lukewarm Water 1 tbsp. Olive Oil Method In a bowl add in the flour, salt, instant yeast and combine. Add in the lukewarm water and olive oil and stir with a fork until the dough is formed.  It should be sticky but not too wet. If it is too wet, sprinkle in a little bit of flour and mix. Cover with a cloth and put in a dark dry place for two hours. Then sprinkle some flour on a large piece of parchment. Fold the dough into a ball and cover for another thirty minutes. In the meantime, preheat the oven to 450 degrees. Put the dutch oven into the oven to warm it up. Place the bread in the dutch oven. Using a knife, score the bread, cover and bake for 30 minutes.  Uncover and bake for another 15 minutes.
