Quick & Simple Shakshuka-inspired recipe  I have so many tomatoes in the fridge and needed to use some up so I made this simplified version of Shakshuka.  In a pan, heat olive oil and cook diced tomatoes (or cherry tomatoes) with salt, pepper, and red pepper flakes until soft and jammy. Dollop 1/2 cup cottage cheese throughout the pan for extra protein.
Crack 2 eggs on top and cover the pan until the eggs are cooked to your liking (I like mine a little more runny than this, but got distracted with an email)

Vanilla Bean & Chocolate Raspberry toast by @Sara Fristoe ✨ This combo tastes like an icecream Sunday, just in toast form. It is as good as it sounds, trust me!  Ingredients:  -chocolate raspberry jam  -1/2 cup plain Greek yogurt  -1/2 tsp. vanilla bean paste Directions: Toast your bread however you prefer. I toast mine with a bit of butter in a skillet over medium heat for extra flavor and a super crisp exterior!  In a small bowl, combine your Greek yogurt and vanilla bean paste.  Layer your yogurt mixture and chocolate raspberry jam in alternating spoonfuls! In a small saucepan, heat 2 cups of blueberries over stovetop with 1 tbsp maple syrup. Once simmering, turn off heat and gently mash berries with a fork or spoon to release juices. Let cool. - Add flour and blueberries to the large bowl with your proofed yeast, stirring until a shaggy dough forms. - Transfer dough onto a floured surface and work with your hands to form a dough ball, adding more flour as needed if too sticky. Transfer dough to the same large mixing bowl, lightly oiled. Cover with plastic wrap & let sit on counter for about 1 hr, until double in size. - Divide dough into 8 equal pieces and roll into a ball. Arrange dough pieces on a lined baking sheet and cover with a kitchen towel or plastic wrap to let rise another 30 mins while your oven preheats. - Preheat oven to 350℉. Place a lightly greased cast iron skillet over medium high heat. Dip each side of the dough ball into a bowl of corn meal before pan frying for 1-2 minutes each side, until a golden brown crust forms. Reduce heat to medium low if they are cooking too quickly. - Bake at 350 F for 10 minutes to ensure they are cooked all the way through. Allow to cool some before slicing and serving. These sheet pan pancakes are always a hit for breakfast and a great way to use fruit before it goes bad!  INGREDIENTS 3 cups of pancake mix 2 1/4 cups of water  Blueberries  Strawberries  Syrup  Butter  INSTRUCTIONS Mix together pancake mix water following the directions of the box. Spray a sheet pan with cooking spray.  Pour pancake batter onto sheet pan and spread out evenly. Top with a couple handfuls of strawberries and blueberries. Bake at 400 degrees for about 12-15 minutes. Top pancakes with a little butter and syrup.  Enjoy!
