Tahiri. Flavorful rice dish made with potatoes and that gold hue is achieved by adding turmeric. I love adding dried plumps for subtle tanginess in every bite!  Ingredients: 1 1/2 cups basmati rice  1/4 cup cooking oil  1 tsp cumin seeds  2 black cardamom  1 cinnamon stick 2 medium thinly sliced onions  3 medium peeled & sliced potatoes  2 tbsp freshly crushed ginger/ garlic  2 tsp turmeric powder  1 tsp coriander powder  2 tsp salt  2 medium thinly sliced tomatoes  3 green chili peppers  Chopped cilantro  1 1/2 cup water  6-8 dried plumps  Cucumber yogurt on the side  Instructions: Wash and soak the basmati rice for at least 30 minutes before cooking.  In a pan add oil. Once hot add the whole spices. Mix it around for 20-30 seconds before adding in the onions. Cook it down a little until it slightly browned. Now add potatoes. Mix and let it cook for 5 minutes before adding ginger/ garlic. Mix well and let that cook for additional 5 minutes. Now add the spices and mix it well. Time to add tomatoes and green chillies. Mix and cover. Let it cook for 10 minutes on low flame. Uncover, mix and add pre soaked basmati rice.  Mix and the add chopped cilantro and water. Make sure the rice is completely submerged. Mix and then add dried prunes on top. Cover and let it simmer on low flame for 30-40 minutes. Fluff it before serving. Link in bio or simply search handymama_of3 Serves 4 Prep time: 10 minutes  Cooking time: 15 minutes Ingredients: 2 cups (a day old) jasmine rice  2 salmon filet  2 tbsp soy sauce  2 eggs  Salt and pepper to taste  4 tbsp Cooking Oil (to be used tbsp at a time) 2 thinly sliced garlic  3 tbsp chopped green onions  1 tbsp sesame oil 1/4 cup soya sauce  2 tbsp oyster sauce  1 tbsp hoisin sauce  1/2 cup peas 1/2 cup cubed carrots  Julianne Scallion for top  Instructions: Boil jasmine rice in some salt only. Once room temperature, cover and place it in the refrigerator. You need at least a day old rice for perfect fried rice.  In a bowl take salmon filets and marinate it in soya sauce. Scramble 2 eggs with salt and pepper in a separate bowl. Set it aside Heat up the wok with oil and fry the salmon. Remove it from the pan and then fry the eggs. Remove. Add more oil and add garlic and green onions. Then add the veggies. Stir fry on high heat. Now add rice. Add oyster, soy and hoisin sauce. Mix well. Finally add back the fried salmon and scrambled egg. Mix and cover. Let it cook on low heat for 5 minutes. For final touch, add julienne scallions. It comes out absolutely delicious.
