Tahiri. Flavorful rice dish made with potatoes and that gold hue is achieved by adding turmeric. I love adding dried plumps for subtle tanginess in every bite!  Ingredients: 1 1/2 cups basmati rice  1/4 cup cooking oil  1 tsp cumin seeds  2 black cardamom  1 cinnamon stick 2 medium thinly sliced onions  3 medium peeled & sliced potatoes  2 tbsp freshly crushed ginger/ garlic  2 tsp turmeric powder  1 tsp coriander powder  2 tsp salt  2 medium thinly sliced tomatoes  3 green chili peppers  Chopped cilantro  1 1/2 cup water  6-8 dried plumps  Cucumber yogurt on the side  Instructions: Wash and soak the basmati rice for at least 30 minutes before cooking.  In a pan add oil. Once hot add the whole spices. Mix it around for 20-30 seconds before adding in the onions. Cook it down a little until it slightly browned. Now add potatoes. Mix and let it cook for 5 minutes before adding ginger/ garlic. Mix well and let that cook for additional 5 minutes. Now add the spices and mix it well. Time to add tomatoes and green chillies. Mix and cover. Let it cook for 10 minutes on low flame. Uncover, mix and add pre soaked basmati rice.  Mix and the add chopped cilantro and water. Make sure the rice is completely submerged. Mix and then add dried prunes on top. Cover and let it simmer on low flame for 30-40 minutes. Fluff it before serving. My version of Puerto Rican Sofrito Chicken Rice (Arroz con Pollo). My kids only taste the deliciousness but little do they know they are consuming so many healthy vegetables. Win win!  Ingredients: Chicken Marinate: 1 cup Sofrito  4 cubed chicken breast  1 chicken bullion cube  1 tbsp cumin powder  1 tbsp smoked paprika  1/4 cup fresh lime juice 3 tbsp olive oil + 3 tbsp olive oil to fry chicken  Rice: 2 cups rice  1 medium chopped white onion 1 tbsp crushed garlic  1 cup chopped celery  1 pickled pepper  1 tbsp tomato paste  1 chicken bullion cube Salt and pepper to taste  20 pitted olives  3 tbsp chopped cilantro  2 cups water  Instructions: In a bowl of chicken. It can also be chicken legs and thighs if you want more flavor but I wanted a quick version so choose chicken breast. Add all the marinade ingredients listed above. Mix thoroughly and set it aside for an hour. Overnight is even better if you are using legs and thighs. Wash and soak the rice. Since I am using basmati rice, it’s an important step as basmati rice takes longer to cook if not pre soaked.  Heat up a pan and add oil. Fry the meat until slightly crispy and golden. Remove from the pan. In the same pan add onion, celery, pepper and garlic. Mix and let it cook for 5 minutes. Time to add tomato sauce and chicken bouillon cube. At this point don’t forget to add leftover chicken marinade. Mix thoroughly. Remove the access water from the rice and add the rice to the pan. Mix well. Add cilantro, olives & fried chicken. Mix and add water. Give it a final mix and put it on a simmer for 30 minutes until rice is cooked through. Serve with sliced avocado and sliced lime. Link in bio or simply search handymama_of3 Serves 4 Prep time: 10 minutes  Cooking time: 15 minutes Ingredients: 2 cups (a day old) jasmine rice  2 salmon filet  2 tbsp soy sauce  2 eggs  Salt and pepper to taste  4 tbsp Cooking Oil (to be used tbsp at a time) 2 thinly sliced garlic  3 tbsp chopped green onions  1 tbsp sesame oil 1/4 cup soya sauce  2 tbsp oyster sauce  1 tbsp hoisin sauce  1/2 cup peas 1/2 cup cubed carrots  Julianne Scallion for top  Instructions: Boil jasmine rice in some salt only. Once room temperature, cover and place it in the refrigerator. You need at least a day old rice for perfect fried rice.  In a bowl take salmon filets and marinate it in soya sauce. Scramble 2 eggs with salt and pepper in a separate bowl. Set it aside Heat up the wok with oil and fry the salmon. Remove it from the pan and then fry the eggs. Remove. Add more oil and add garlic and green onions. Then add the veggies. Stir fry on high heat. Now add rice. Add oyster, soy and hoisin sauce. Mix well. Finally add back the fried salmon and scrambled egg. Mix and cover. Let it cook on low heat for 5 minutes. For final touch, add julienne scallions. It comes out absolutely delicious.
