Stuffed Pepper Soup 1.5 # ground beef 3 bell peppers diced 2 red 1 yellow 1 cup yellow onion diced 5 garlic cloves minced 6 cups chicken stock 1 can (14.5oz) petite diced tomatoes 1 can (15oz) tomato sauce 1 tablespoon kosher salt taste if more is needed as the rice soaks a lot of it up 1/2 teaspoon black pepper 1 tablespoon Italian dried herbs Pinch of crushed red pepper 1 tablespoon paprika 3/4 cup jasmine rice washed Mild cheddar for topping  Sour cream for topping Method Cook beef on high heat for about 5 minutes, remove and drain half the fat. Leave the other half in the pot and add your peppers and onions, cook on medium heat for 10 minutes. Add your minced garlic and cook for another 3 minutes. Then add in all of your spices and herbs, followed by diced tomatoes, tomato sauce, ground beef and chicken stock. Bring to a boil on meeium heat and cook for 15 minutes. Add in your uncooked rice and cook for another 15mins. Top with shredded mild cheddar, sour cream, paprika and cilantro. That cheese pull though.. ๐Ÿซ  Cheese Bombs 1 package pizza dough (pillsbury 13.8oz) 1 egg 1 tablespoon milk Flour for dusting  6 string cheese each cut in 4 piece dealing 24 pieces For the Parmesan butter: 2 tablespoons melted butter 1 large garlic clove grated  Pinch of salt 1 teaspoon Italian herbs mix 1/4 cup fresh grated Parmesan (pre-bought grated parm is fine for this one too) Method: Dust some flour in your counter top and lay your pizza flight down. Gently press it out a little bit  with your hands, no need for a rolling pin. Cut in 24 pieces.  Grab a piece of cheese place on the middle and fold it and pinch, repeat with the rest of them. Next, line a baking sheet with parchment paper and spray a bit of pan spray. Start arranging the cheese bombs, folded piece at the bottom and start creating a tree shape.  Beat one egg with the milk and brush the dough thoroughly with it. Bake at 400 degrees for 10 minutes and then at 425 degrees for 8 minutes In the mean time, get your garlic Parmesan butter ready. Once the Christmas tree is baked, brush with the garlic Parmesan butter and sprinkle a bit more of the Italian herbs on top. Serve with your favorite marinara sauce. Youโ€™ll cook this for about 5 minutes until it gets a bit crispy and then remove and set aside. Add in your carrot, celery and onions to your pan and your butter and cook for about 8-10 mins on medium heat. Now add in your minced garlic and cook for about a minute. Next, add in your flour and cook for a few more minutes. Now gradually add in your chicken stock as youโ€™re stirring to avoid any clumping. Add your potatoes, corn, all your herbs and seasonings, heavy cream, sriracha, and bacon strips (leave a few aside for topping) and cook on medium heat for about 40 minutes.
