β¨MARRY ME SHRIMP PASTA!!! This recipe is sooooo good that it was named marry me shrimp pasta. Itβs creamy, delicious, and bursting with flavor! This recipe is healthified by using coconut milk instead of heavy cream and adding chicken broth! I hope you enjoyππ Ingredients: Shrimp + seasonings (1 tbsp of each: paprika, garlic, Italian blend, aglio olio) 2 tablespoons sun dried tomato oil 4 cloves garlic minced 1/3 cup sundried tomatoes in oil, drained 2 shallots, chopped 1/4 cup tomato paste 2 tbsp flour 1 1/2 cups chicken broth 1/2 cup full fat coconut milk or heavy cream 1/2 cup pasta water 2 large handfuls spinach β¨1/2 cup parmesan cheese grated 2 tsp chili flakes (or less if you donβt like it spicy) Pasta (I used 3/4 a bag!) Salt and pepper to taste 1. Pat shrimp dry and season. 2. Cook pasta according to al dente instructions. 3. Heat a pan with sun dried tomato oil and add the shrimp. 4. Cook the shrimp for 2-3 min on each side on high heat. Then, add the sundried tomatoes, garlic, and shallots + cook for 3 min more. Add flour and mix. 5. Add chicken broth, coconut milk, pasta water, and spinach. Mix to form your sauce! 6. Add the cooked pasta, spinach, and parm. Mix and enjoy omg itβs sooooo good.
