Chicken Caesar Crunchwrap Supreme I was on the couch consuming mostly liquids for like 3 weeks, so needed a good meal to come back and make with yaā€™ll. I wanted it to eat like fast food but be kinda healthy, and then fate placed this tweet in my timeline and everything clicked.  I made everything from scratch, with eyed out measurements, but using a very much traditional Mexican approach to both the caesar dressing and tortillas (aside from the baking powder leavening agent). You dont gotta do all that though I was just happy to not feel like trash. I think this would be spectacular even if you took a bunch of shortcuts. Make it - make it your own - and enjoy! Chicken Milanese & Caesar Salad! As a non chicken lover... I've been trying to love it and this might be one of the best combinations known to man. Brining the chicken is optional but recommended so it's super moist! I did 2 cups water & 2 tbsp kosher salt. You boil the water with the salt and let if cool. Brine chicken for 4-12 hrs. Rinse and pat dry. Ingredients: * 2-3 large chicken breasts. * 1/3 c flour. * 1 1/2 cup panko. * 2 eggs. * 2 tbsp milk. * 1 egg yolk. * 3 anchovies. * 1/2 garlic clove. * 1/4 cup freshly grated parmigiano reggianoĀ + more for shaving over the salad. * 1/2 lemon + more for serving. * 1/4 tsp worcestshire. * 1-2 squirts of tabasco. * 1/3 cup  olive oil. * 1 tsp dijon mustard. * salt and pepper to taste (I used my seasoned salt). * 1 tsp dried oregano. * 4-6 cups chopped romaine hearts. Directions: 1. Slice the brined chicken breasts, then pound until desired level of thickness. 2. Whisk the egg with milk and strain onto a plate. 3.  Mix the flour with salt, pepper and oregano. 4. Coat the chicken well on both sides with the flour, dredge with the egg and coat with the panko. Let it sit for 15-25 min on a wire rack. 5. Chop the anchovies and garlic together, forming a paste with the back of your knife. 6. Add the yolk, dijon, garlic and anchovy paste to a bowl. Mix well. Add in the parm, worcestshire, tabasco and some lemon. Don't add the whole thing, taste and adjust. Mix well. Emulsify the olive oil until smooth. Adjust salt/pepper to taste. 7. Preheat a pan on medium high for 2-3 min. Add plenty of olive oil and lower to medium high. 8. Fry the chicken breasts on medium high until golden on both sides, about 2-3 min per side. Remove from the pan. 9. Mix the salad with the dressing. 10. Top with the salad, more parm and black pepper. #chicken #chickenmilanese #chickencaesar #crispychicken

DAY 2/30: Chicken Caesar Meatball Subs. šŸ„ŖšŸ„— These are inspired by another creator on here (canā€™t remember who) and I HAD to try to create them for dinner. Canā€™t wait to make these again!šŸ¤ŒšŸ» ā€¢ā€¢ā€¢ā€¢ā€¢ā€¢ Ingredients: Sub Rolls or Bolillo Rolls 1 lb ground chicken 2 tbsp  Caesar dressing + more for topping 1/2 cup breadcrumbs 1 egg 1/4 cup shredded or grated parmesan + more for topping 1 tsp each: garlic powder, salt,  pepper Romaine lettuce  ā€¢ā€¢ā€¢ā€¢ā€¢ā€¢ Instructions: 1. Add ground chicken, egg, breadcrumbs, seasonings, 2 tbsp Caesar dressing & 1/4 cup parmesan to a large bowl. 2. Mix well and form golf ball sized meatballs. 3. Heat a large pan over medium heat and add avocado oil. 4. Add meatballs to pan and cook covered for about 15 minutes, flipping occasionally until meatballs are browned on both sides.  5. Toast your sub rolls in the oven on a low broil for just a couple of minutes. Cut them open if they are not already. 6. Assemble subs: Caesar dressing, lettuce, parmesan, meatballs Enjoy!
