I could eat this every day tbh - chopped chicken Caesar wrap š«” get the recipe belowā¼ļø INGREDIENTS (for 4 servings) ā¢ 1 lb chicken breast, cut thinly into cutlets ā¢ kosher salt ā¢ 2 freshly ground black pepper ā¢ about 1 cup extra virgin olive oil, divided ā¢4 slices sourdough bread, cut into cubes ā¢4 cloves garlic, minced ā¢1 tbsp anchovy paste ā¢2 egg yolks ā¢juice of 1 lemon ā¢1 tbsp Dijon mustard ā¢1 tsp Worcestershire ā¢Parmesan cheese, freshly grated ā¢1 large bunch romaine lettuce ā¢large burrito tortillas or wraps DIRECTIONS: ā¢Preheat oven to 400F. ā¢Pat the chicken cutlets dry, and season liberally with salt and pepper. Heat a couple tbsp olive oil in a large pan over medium. Seat the chicken breasts on both sides until lightly golden and internal temperature reads 160F. Remove from heat and set aside. ā¢On a parchment-lined baking sheet, lay out the cubes of sourdough. Drizzle on some olive oil and mix to coat the bread. Bake for about 20 minutes, or until brown and crispy. Set aside. ā¢Make homemade Caesar dressing - On a cutting board, combine the minced garlic with about 1 tsp kosher salt. Use a knife at an angle to mash the garlic and salt into a paste. Put the garlic & salt combo in a large bowl then add in the anchovy paste, egg yolks, Dijon mustard, lemon juice, and Worcestershire. Whisk to combine, then slowly drizzle in about 1/2 cup olive oil while still whisking. A thick and creamy dressing should form. Add in about 1/3 cup freshly grated Parmesan and stir. ā¢On a large cutting board, lay down the chopped romaine, croutons, cooked chicken, Caesar dressing, and fresh sprinkle of grated parm.
