RECIPE: CHICKEN POT PIE SOUP 🍗🫛🥕 The healthiest, most delicious chicken pot pie soup recipe you'll ever find! This soup is full of nutrients, veggies, and healthy proteins. Also, there's no heavy cream, unlike most other recipes. Serving Size: 6 Ingredients: 3 cups diced rotisserie chicken breast 3 tbsp butter 1 yellow onion, diced 5 cloves garlic, minced 1 cup carrots, diced 1 cup celery, diced 1 cup mushrooms, diced 1/4 cup all-purpose flour 1 cup 2% milk 1 cup golden potatoes (I used 10 mini golden potatoes, but you may need to use less if you use larger golden potatoes) 6 cups chicken broth 1 cup frozen peas 1 cup frozen corn 1 tsp chicken bouillon 3 Pillsbury Grand! biscuits from the can 1 tsp thyme (for topping biscuits) Seasonings: 2 tsp salt 1 tsp pepper 1 tsp dried thyme 1 tsp dried oregano 1 tsp dried rosemary Recipe: Heat a large pot or dutch oven on medium heat. Once melted, add in chopped onions, garlic, carrots, celery, and mushrooms. Let simmer for 8 minutes. Add in the seasonings. Then, add in the flour and mix around. Pour in the chicken broth and turn to a boil. Then, add in the potatoes, frozen corn, frozen peas, and chicken bouillon. Mix around. Once boiling, set a timer for 30 minutes and allow to boil while stirring occassionally. While this is cooking, chop your rotisserie chicken breast and then set aside. Preheat your oven to 400°F. On a cutting board or plate, add the Pillsbury biscuits and gently pull into halves, longways, to make the biscuits thinner. Once they're thinner, chop each biscuit into quarters so that they are crouton-sized. Add them onto a sprayed pan and top with dried thyme and a pinch of salt. Add them into the oven for 8 minutes, or until lightly browned and puffy, them remove and set aside. After the soup has boiled for 30 minutes, remove the potatoes with a small strainer or large spoon and add into a blender. It's okay if some of the other veggies are added into the blender, as well, as it is very hard to seperate the potatoes completely. Add in the milk and then mix in the blender until creamy. Add the creamy potato mixture back into the soup, along with the shredded chicken, and stir. Serve in bowls and top with the puff pastries. Ingredients: Chicken Breast - 2 Onion - 1 small Garlic - 6 cloves Adobo Seasoning Italian Seasoning  Lemon Juice - 1 Bay Leaf - 2 Chicken Broth - 32oz Worcestershire Sauce  Onion - 1 Garlic - 6 cloves Carrot - 4 Celery - 5 Mushrooms - 8oz Frozen Corn - 1c Frozen Pease - 1c Frozen Potatoes - 2c Pie Crust - Chicken Stock - 2 1/2c Light Cream - 1c Flour - 4tbsp (+1tbsp) Salt Pepper Italian Seasoning Directions: 1. I made my own boiled chicken but if you don’t want to do that you can just use a shredded rotisserie chicken! I added two chicken breast to a pot with one small onion quartered, garlic cloves, adobo seasoning, Italian seasoning, the juice from one lemon (I leave the lemon whole in the pot) and two bay leaves. Pour in chicken stock until covering the chicken breast and add a few dashes of Worcestershire sauce. Bring to a boil and then lower heat to a simmer and cover until the internal temp of the chicken reaches 165. Let chicken cool and then dice. I like to strain the pot and use the stock for the pot pie.  2. Dice all of your veggies into roughly the same size chunks and thinly slice the mushrooms.  3. Add in the onions, carrots, celery and mushrooms to a skillet or Dutch over with some olive oil and cook for 5-8minties until softened. Add garlic along with salt, pepper and Italian seasoning. Then add the flour and mix to fully incorporate. Cook for 3mins and then slowly add in the broth while mixing. Allow to thicken for a few mins and then add in chicken and light cream. I added 1tbsp of flour mixed with 3tbsps of water to help thicken it more.  4. Add in the corn, peas and potatoes. Season again with salt, pepper and Italian seasoning. Then top with pie crust and press along the sides. Brush the top with an egg wash and some salt and pierce the center to allow steam to escape.  5.  Bake at 375 for as long as it takes for the pie crust to turn brown. Mine too about 40mins. Let it sit for a little while to thicken. I didn’t let mine sit long enough so it was a little soupy at first. BAHAN-BAHAN: 2 cawan sayur campur sejukbeku 1 biji bawang besar – dipotong dadu 4 sudu makan mentega 2 cawan isi ayam – potong dadu 1 cawan tepung gandum 2 cawan stok ( air rebusan) ayam 1 kiub pati ayam 1 cawan heavy whipping cream 1 sudu teh daun thyme kering Lada hitam dan garam secukup rasa CARA MEMASAK: 1. Cairkan mentega di dalam periuk. Tumis bawang hingga wangi dan masukkan sayur campur. Masak selama beberapa minit. 2. Masukkan isi ayam dan kacau sebati. 3. Taburkan tepung secara rata ke atas sayur-sayuran dan kacau lagi hingga sebati. Masak selama beberapa minit sambil dikacau. 4. Tuang air rebusan ayam serta kiub pati ayam. 5. Masukkan heavy whipping cream dan kacau lagi hingga pekat. 6. Tambahkan daun thyme, garam serta serbuk lada hitam. Siap. 7. Tuangkan campuran ayam ke dalam pinggan pai atau mangkuk kaserol kecil. Ketepikan. BAHAN DOH PIE: 80gm tepung gandum 115gm mentega 2 biji telur 1/2 sudu teh garam 2 sudu makan air ais CARA MEMASAK: 1. Masukkan tepung gandum, mentega, telur dan garam ke dalam pengadun. Putar sebati. 2. Masukan air ais, putar lagi. 3. Keluar doh dari pengadun, bungkus dalam cling wrap dan simpan dalam peti sejuk lebih kurang 15 – 20 minit. 4. Tabur sedikit tepung di atas papan atau meja. Canai doh pai supaya ia lebih lebar 1 inci dari pinggan pie @ mangkuk kaserol kecil yang telah diisi bahan inti tadi. 5. Letakkan doh pie di atas permukaan inti campuran ayam tadi. 6. Tekan doh pie dengan perlahan ke bahagian pinggan, kelar sedikit permukaan dih, sapu dengan telur dan tabur sedikit daun thyme. 7. Bakar pada suhu 180C selama 40 minit atau sehingga doh berwarna perang keemasan. 8. Keluarkan dari ketuhar, sejukkan selama 10 minit dan sedia untuk dihidangkan.
