The best healthy CHICKEN SALAD! 🍗🍋🥑 Chicken salad is one of my favorite lunches to prep for the week, because it’s so versatile! You can add it to sandwiches, wraps, on top of a salad, or with crackers & sliced veggies! This is my favorite way to make it, it has so much flavor, is high in protein & healthy fats, and is soooo delicious! Ingredients: - 1/2 cup plain greek yogurt - 2 tbsp avocado oil mayo - Juice of 1/2 a lemon - Salt & pepper to taste - 2 shredded chicken breasts (I air fry mine with garlic powder, salt & pepper) - 1/4 of a red onion, finely diced - 1 stalk green onion, finely diced - 1 stalk celery, finely diced - 1 tbsp parsley, finely diced - 1/4 cup chopped walnuts or pecans (optional) How to: - Add greek yogurt, avocado oil mayo, lemon juice, salt & pepper to a mixing bowl and whisk until smooth. - Add shredded chicken, red onion, green onion, celery, parsley, and walnuts. - Stir well so it’s all combined. Store in the fridge in an airtight container for 3-4 days! My favorite way to eat it is on sourdough toast with sliced avocado, or in a wrap! Enjoy 🥰
