CHICKEN SALAD ▢ 3 cups chopped rotisserie chicken skin removed ▢ 1 serving blended cottage cheese (recipe below) can sub Greek yogurt, dairy-free yogurt or mayo ▢ 2 tbsp mayonnaise or light mayonnaise ▢ 1/2 red onion finely chopped ▢ 1/2 cup pepperoncinis chopped ▢ 1 tbsp pepperoncini juice ▢ 1 tbsp hot pepper jelly ▢ 1/2 teaspoon garlic powder ▢ 1/2 teaspoon onion powder ▢ Salt and pepper to taste ▢ Optional garnish: fresh parsley or chives chopped BLENDED COTTAGE CHEESE ▢ 1 cup blended cottage cheese ▢ 2 tbsp pepperoncini juice Instructions  Blend the cottage cheese in a food processor or blender with the pepperoncini juice until smooth. In a large mixing bowl, add the chopped rotisserie chicken, blended cottage cheese, and mayonnaise. Mix well until evenly coated. Stir in the finely chopped red onion, chopped pepperoncinis, salt, pepper, garlic powder, onion powder, and pepperoncini juice. Combine thoroughly.  Refrigerate the chicken salad for at least 20 minutes to let the flavors meld. Save and Share my recipe for Crispy Rice Chicken Salad!For the Crispy Rice drizzle olive oil and chili oil over cooked rice, mix it all together and then flatten on baking sheet. Bake at 400F degrees for 25-30 minutes and 500F for 5 minutes.  For the salad bowl I added the crispy rice, carrots cucumbers, edamame, avocado, mint, chicken, chopped peanuts and peanut dressing.  The peanut dressing is 2 tbsp peanut butter, 2 tbsp sesame oil, 1 tbsp soy sauce, 1 tbsp hoisin sauce, 1 tsp rice vinegar and 2 tbsps of water. #crispyrice #chickensalad

The best healthy CHICKEN SALAD! 🍗🍋🥑 Chicken salad is one of my favorite lunches to prep for the week, because it’s so versatile! You can add it to sandwiches, wraps, on top of a salad, or with crackers & sliced veggies! This is my favorite way to make it, it has so much flavor, is high in protein & healthy fats, and is soooo delicious!  Ingredients: - 1/2 cup plain greek yogurt  - 2 tbsp avocado oil mayo  - Juice of 1/2 a lemon  - Salt & pepper to taste  - 2 shredded chicken breasts (I air fry mine with garlic powder, salt & pepper) - 1/4 of a red onion, finely diced  - 1 stalk green onion, finely diced  - 1 stalk celery, finely diced  - 1 tbsp parsley, finely diced  - 1/4 cup chopped walnuts or pecans (optional) How to: - Add greek yogurt, avocado oil mayo, lemon juice, salt & pepper to a mixing bowl and whisk until smooth. - Add shredded chicken, red onion, green onion, celery, parsley, and walnuts. - Stir well so it’s all combined. Store in the fridge in an airtight container for 3-4 days! My favorite way to eat it is on sourdough toast with sliced avocado, or in a wrap!
