Saucy Cranberry Mini Meatballs - the perfect holiday appetizer! Ingredients: (Makes about 20 mini meatballs) For the meatballs: - 1 lb ground beef - 1 egg - 1/2 cup seasoned Italian breadcrumbs - 2 garlic cloves, minced - 1 tbsp tomato paste - 1/4 tsp garlic powder - 1/4 tsp onion powder - 1/4 tsp pepper - 1/1 tsp Italian seasoning - 1/2 tsp salt For the sauce: - 1/2 cup of cranberry sauce (If you need a good homemade cranberry sauce recipe, you can find it on my page) - 1/3 cup BBQ sauce - 3 tbsp low-sodium soy sauce - Black pepper, to taste Directions: 1. In a bowl, combine: ground beef, 1 egg, Italian breadcrumbs, crushed garlic, tomato paste, and seasonings. Mix thoroughly and form into 20 mini meatballs. 2. Place meatballs on a baking sheet with a drizzle of olive oil and cook on 400º for 15 minutes, or until the meatballs reach 160ºF internally. 3. While the meatballs are cooking, combine: cranberry sauce, BBQ sauce, and soy sauce in a pot. Bring to a low boil and stir well. 4. When the meatballs are fully cooked, coat them in the sauce. Enjoy!
