Follow me on instagram!! *makes 12 rolls Ingredients for the dough: - 4 cups all purpose flour - 1/3 cup granulated sugar - 1 packet of active instant yeast (2 1/4 tsp) - 1 egg - 6 Tbsp unsalted butter - 1 1/2 cups whole milk - - 1 1/2 tsp instant coffee Filling: - 3/4 cup brown sugar - 1 Tbsp ground cinnamon - 1 1/2 tsp instant espresso powder - 1 tsp instant coffee - 8 Tbsp unsalted butter, softened - 3/4 cup heavy cream + 1tsp instant coffee Frosting: - Mix 2 Tbsp unsalted butter, 5oz cream cheese, and 1/3 cup mascarpone cheese for 2 min. Add in 1 tsp vanilla extract and 3/4 cup powdered sugar and mix until smooth. Directions: 1. For the dough: Microwave the milk and butter together until the butter melts. Mixture should be warm, not hot. Stir in the instant coffee until combined. 2. In the bowl of a stand mixer, mix the flour, yeast, sugar, and salt using the hook attachment. Add in the milk/butter/coffee mixture and mix on med-low for 2 min. 3. Add in the egg then slowly increase the speed for 1 min. Then continue mixing on high for 7min. If the dough is really sticky by the end, add in 1-2 Tbsp of flour. 4. Knead dough into a smooth ball and place it in a greased bowl. Cover and store in a warm place to rise for 1 hour. 5. Make the filling: mix together the butter, cinnamon, brown sugar, instant espresso and instant coffee. 6. Preheat oven to 350 degrees Fahrenheit. 7. Lightly flour a surface and roll out the dough into a long rectangle. Spread the filling on top of the dough. 8. From the long end, roll dough into a tight roll. Use string to cut out 12 rolls. 9. Place rolls in a greased 9x13 inch pan. Pour the 1 cup heavy cream over the rolls and brush each roll so it’s covered in cream, 10. Place in the oven for ~30min or until golden brown. Let them cool. 12. 12. Wait until rolls have cooled for at least 30 min before spreading the frosting on top. Top with cocoa powder (optional). 13. Store in the fridge.
