Vegan Cosmic Brownies πŸš€πŸŒ±πŸŒˆ (High Protein) Did you know cosmic brownies have a long list of toxic ingredients? I made these vegan ones with simple ingredients and you don’t have to worry about your health! I also added my favorite clean, 5 ingredient protein powder from @complement and almond butter for great plant protein! πŸ’ͺ🏽It has only almonds, chia seeds, pumpkin seeds, yellow pea, & sunflower seeds 🌱 Completely gluten free, & non gmo! πŸ™ŒπŸ½ Ingredients: Brownie Base β€’1 cup oat flour (or blend rolled oats into flour) or almond flour β€’1/2 cup unsweetened cocoa powder β€’1/2 cup @Complement unflavored protein powder (Discount code: MYBGR15) β€’1/2 tsp baking powder β€’1/4 tsp salt β€’1/2 cup maple syrup or agave syrup β€’1/4 cup almond butter (or any nut/seed butter) β€’1/3 cup unsweetened almond milk (or any plant-based chocolate milk for extra flavor) β€’1 tsp vanilla extract Chocolate Ganache β€’1 cup vegan dark chocolate chips β€’4 tbsp coconut cream (scoop the solid part from a can of coconut milk) Instructions: 1. Preheat the oven to 350Β°F (175Β°C) and line an 8x8-inch pan with parchment paper. In a large bowl, whisk together the oat flour, cocoa powder, protein powder, baking powder, and salt. Add the maple syrup, almond butter, almond milk, and vanilla extract. Mix until smooth. The batter will be thick. 2. Spread the batter evenly into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let the brownies cool completely. 3. After it cools, melt the vegan chocolate chips and coconut cream together in a microwave or over a double boiler. Stir until smooth and glossy. 4. Spread the ganache over the cooled brownies. While the ganache is still soft, sprinkle with vegan colorful sprinkles. 5. Place the brownies in the fridge for 30 minutes to set the ganache. Once set, slice into squares and serve!
