Replying to @Jessica Adkins Anything else I could do to capture the full chaotic energy of Muffin?? I always love hearing your clever ideas!  I’m not lying when I say this took 27 minutes (and that’s not even counting the baking or icing mixing). Making character cookies is not a practice in creative art, but methodical preciseness. I used to despise making them for that reason.  But I’ve recently come around to appreciating a character cookie for that exact reason; it tickles the same spot in my brain that coloring in a coloring book does. There’s something satisfying and relaxing about just filling in the space. Be honest- did you know what a nonpareil is!?!? Show of hands folks 🙋🏻‍♀️😂 The addition of cream cheese and cornstarch in these cookies makes them so soft and perfect! 

1/2 cup butter, softened
3 oz cream cheese, softened 
1 1/2 cups sugar 2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 1/2 cups flour
2 teaspoons corn starch
1 teaspoon baking soda
1/2 Teaspoon salt
1 cup-ish NONPAREIL 😂 sprinkles, Christmas colored if you can find them!  * In bowl of stand mixer fitted with paddle attachment, or a large bowl using hand mixer, cream together the butter, cream cheese, sugar, eggs, and extracts until light and fluffy. About 5 minutes. * Scrape down the sides of the bowl with a spatula. Add the flour, corn starch, baking soda, and salt. Mix together on low/medium speed for one minute, until combined. * Refrigerate dough for two hours before baking. * When dough is done chilling, preheat oven to 350 degrees. Line two baking sheets with parchment paper, or spray with non-stick cooking spray. * Pour the sprinkles into a medium bowl, and roll tablespoon sized balls of dough into the sprinkles. * Place the cookies onto prepared baking sheet, spacing 2 inches apart. * Bake for 9 minutes. These should not turn golden brown, and will still look wet when they come out of the oven. * Allow cookies to cool on baking sheet for 3-5 minutes before moving to a wire rack to cool completely. Erica’s Christmas Sweatshop part one! I’ve talked about this for well over a decade but in case you’re new- back when I was in high school I made my  friends make holiday cookies in a jar for hours on end for our choir fundraiser. They termed it “Erica’s Christmas Sweatshop” and ever since I’ve referred to my EXTRAAA long day of holiday baking as such. I have and am planning to do a few little baking projects with my girls but I like to get the bulk done in one day that way 1) my kitchen only gets annihilated once and 2) I have a large assortment of cookies to take to friends and family, teachers, coworkers and holiday parties! Featured in the day’s part one: Double chocolate crinkle cookies (recipe from @krollskorner) Iced oatmeal cookies (recipe from @sallysbakeblog Peanut butter balls (recipe below) Oreo truffles (1 box of oreos + 1 block of cream cheese, blend in a food processor, roll into balls, freeze and then dunk in melted chocolate!) PB balls: 1 cup butter, softened 1 cup creamy peanut butter 3 1/2 cups powdered sugar 1 teaspoon vanilla 1/4 teaspoon salt 1 cup add-ins: crushed potato chips, graham crackers, ritz crackers or pretzels Blend the butter and peanut butter in a stand mixer until smooth and creamy. Add the powdered sugar, vanilla and salt and beat until smooth, whipped and fluffy. Mix in the add-ins. Roll into balls, freeze until solid.
