“Baklawa hand fans” If you love Baklawa, then you will definitely love these fancy Baklawa fans that are made from the same ingredients but made into a gorgeous hand fan, perfect for gatherings. Ingredients: 1/2 pack phyllo dough  1/2 cup butter, melted 1 cup grounded pistachio For the simple sugar syrup: 1 cup granulated white sugar 1 cup water Squeeze of lemon and cardamom Method: Preheat oven to 380F The technique is quite easy, all you need to do is cut square sized phyllo dough. Brush first piece with butter then place second piece right on top, start folding the dough as you would fold a piece of paper to create a hand fan, then fold it in half, place a tooth pic at the bottom edge so it holds. Place in the preheated oven and bake for 7 minutes or until golden. “Cheesy Zaatar & Potato Upside down pie” ——- Episode 11: my newest episode of my “upside down pies” series are these delicious cheesy Zaatar & Potato pies, if you haven’t tried mixing cheese with Zaatar on top of potatoes then you are in for a treat! I’ve been making this combo for years now but wanted to try it with my upside down pies and they turned out exceptionally good. Give it a try and tell me what you think! All you need for 6 pieces: 6 small golden small potatoes 1 puff pastry sheet cut into 6 squares 1/2 cup grated triple cheddar cheese or any other shredded cheese  1/4 cup Butter, softened  1/2 cup Zaatar Mix Flakey salt Egg wash (whisked egg) Method: Wash the potatoes well, then using a mandolin, slice them thinly, pat dry and set aside. Preheat oven to 380F Prepare an oven sheet with parchment paper, drizzle butter in 6 locations of the sheet, leaving adequate space between them, sprinkle Zaatar mix, pinch of flakey salt then add the potato slices, add more Zaatar if you want, finally add a bit of the grated cheese on top & place 1 piece of the dough on top of that and seal the edges with a fork, slightly make cuts in the dough and brush evenly with egg wash. Bake in the oven for 12-15 min or until golden, take it out and let it cool for 5 minutes before flipping it. Enjoy #upsidedownpie #zaatar #potatopie  #cookingwithlamees
“Dates & Biscoff bars” —————- Bringing a slight twist to the regular date and peanut butter bars and using Biscoff instead which added a delicious biscuity flavor to the dates and with melted dark chocolate, you can never go wrong with this. Enjoy a slice of this delicious bar with a cup of warm tea! Ingredients are not measured but this would be an estimation of what i added, feel free to make it your own by adding peanut butter and nuts instead of Biscoff and Biscoff biscuits if you still prefer the classic. Ingredients: Around 30-40 Soft Majdool dates 1/3 cup Biscoff 5-10 pcs biscuit Biscoff (optional) 150-200gm melted dark chocolates Seasalt  Place it in the freezer for at least an hour before taking it out and slicing it into bars and serve. Sharing my most viral videos of 2024 “Halloumi chips with honey & Zaatar” you guys absolutely loved these halloumi chips with Zaatar and honey, they are a fun way of getting more protein in your diet and with a dash of honey and Zaatar, it makes every bite so good!  So if you love halloumi just like me then im pretty sure you will love this too! it truly cannot get better than this! 😍 All you need is 1 block Halloumi 2 tbsp Zaatar mix 1/3 cup honey Method: Preheat oven to 350F Slice the halloumi as thinly as you could, place them on an oven sheet with parchment paper, mix the honey and zaatar together then brush each slice with a good dollop of it, place in the oven for 10 minutes or 15 if you want it crispier and enjoy  #halloumi #halloumichips #highproteinrecipes #cookingwithlamees #halloumirecipe

Cheesy Smashed Potato Upside Down Pie ——- #Ad Episode 10: entering year 2025 with my newest episode of my “upside down pies” series and this time is for my potato lovers, especially the smashed kind of potatoes, and with gooey cheese from #bordencheese to make that perfect pie to enjoy as a snack throughout the day. All you need for 6 pieces: 6 small golden potatoes 1 puff pastry sheet cut into 6 squares 1/2 cup grated triple cheddar #bordencheese Fresh thyme leaves Olive oil Balsamic glaze Flakey salt Egg wash (whisked egg) Method: Place the potatoes in a pot full of water and boil for 20-25 minutes until tender. Set aside. Preheat oven to 380F Prepare an oven sheet with parchment paper, drizzle olive oil in 6 locations of the sheet, leaving adequate space between them, drizzle balsamic glaze, pinch of flakey salt then add the potatoes, smash gently using a jar then add a bit of the grated cheese on top then place 1 piece of the dough on top of that and seal with a fork, slightly make cuts in the dough and brush evenly with egg wash. “The Creamiest homemade Hummus” If you still haven’t tried out my famous Hummus recipe then you are missing out! It’s the creamiest one you could ever try, I’ve been working on perfecting it for more than a year and finally proud with its texture and taste. Following the below steps will guarantee you get the creamiest result ever. note: although I recommend the dried chickpeas, however for those in a hurry and don’t have time to do that, you can skip it and make this  with cans. as someone who has tried both, there is a a very slight difference in both and as for me and for convenience, I regularly make this one instead.  What you need: For the hummus: 2 cans of chickpeas low sodium, 1/2 cup tahini paste, 2 garlic clove, Juice of 1 large lemon 1 tsp bicarbonate of soda 2 tsp salt and pepper 2 blocks of ice medium size( it will keep it cold and very smooth) Method: 1. Start by adding the chickpeas to a pot with more water to cover it entirely ( i noticed that rinsing it from it’s water doesn’t change taste or texture so you don’t have to do that) 2. Add 1 tsp of bicarbonate of soda, it will start boiling and creating a big foam, let it boil for 5-7 min. Adding this will help removing the skin much easier and faster. 3. Prepare a bowl with water, take out the chickpeas and place (without the boiling water) into the bowl, with your fingers gently rub the chickpeas and remove the skin, rinse the chickpeas to remove all skin snd place in another bowl. 4. Add the tahini paste, lemon juice, salt, pepper and garlic to the food processor and process without the chickpeas to create a paste, after that add the chickpeas and ice to the processor and process until completely smooth. 5. 2024 will always hold a special place in my heart. Despite its challenges, I wouldn’t change a thing. I had the privilege of visiting Dubai not once, but twice, and reuniting with my family and friends after 10 long years apart. I also had the honor of cooking live for you—three times! “Dubai Chocolate Stuffed strawberries” —————— You’ve probably tried the Dubai Chocolate by now but have you tried Dubai Chocolate Stuffed strawberries before?! I was honestly quite skeptical when making them but surprisingly enough, they turned out really good. The soft texture of the strawberries mixed with the crunchiness of the toasted kataifi dough was delicious.  Try it out and tell me what you think down below! Ingredients: 10-15 large strawberries 1 cup Kataifi dough cut into small pieces 2 tbsp butter  3/4 cup Pistachio butter 1 cup/200gm melted chocolate  White chocolate (optional) Method: -wash strawberries, pat dry and remove the inside flesh using a fruit corer. -place Kataifi dough in a pan, add butter and cook gently on medium to low heat until brown and crispy (around 10-12 min). Transfer to a bowl and pour on top the pistachio butter, mix well. -Start stuffing the strawberries with 1 tsp of the mixture, then dip it entirely in the melted chocolate and place them in an oven sheet with parchment paper. Repeat the process for the rest of the strawberries.
