Crock-Pot Deer Chili
Ingredients:
1 pound deer meat or ground beef
1 bell pepper, diced
1 onion, diced
2 jalapeños, deseeded, destemmed, and diced
4-5 garlic cloves, minced
1 (28 oz) can crushed tomatoes
1 (15 oz) can light or dark kidney beans, drained and rinsed
1 (15 oz) can fire-roasted tomatoes
1 cup beef broth
Chili Seasoning:
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon cayenne pepper
Instructions:
1. Brown the Meat: In a large pot over medium heat, add the meat and break it up while cooking.
2. Add Vegetables and Seasoning: Stir in the bell pepper, onion, and jalapeños. Sprinkle with the chili seasoning and cook until the meat is browned and the vegetables are soft.
3. Garlic: Add the minced garlic and cook for another minute until fragrant.
4. Transfer to Crockpot: Move the meat mixture to your crockpot. Add the crushed tomatoes, fire-roasted tomatoes, beef broth, and kidney beans. Stir to combine.
5. Slow Cook: Cook on low for 6-8 hours.
6. Taste and Adjust: After cooking, taste and adjust seasoning if needed.
7. Serve: Serve hot with jalapeño cheddar cornbread or Fritos. Top with shredded cheese and sour cream.
