It’s Day 1 of #21DaysOfFlavorIn30, this 21 days series will be a mixture of flavorful & lighter meals that can be on your dinner table in 30 minutes or less. Let's kick off day 1 with Sesame Ginger Chicken Lettuce Wraps. Ya girl was very busy today and needed something I could throw together in 15 minutes. These wraps (or lettuce boats)  are proof you can keep it healthy and delicious without breaking a sweat—or the bank. Whether you’ve got these Costco’s crumbles or you’re whipping it up from scratch, this recipe is a whole vibe! #FreshFlavorsIn30  What you’ll need: -1 lb Sesame Ginger Chicken Crumble from Costco or you can use Ground Chicken (see details below) -1 head of butter lettuce or romaine lettuce, separated into leaves -1/2 cucumber, chopped (optional) 1/4 cup water chestnuts -1/4 cup fresh red onion, finely diced (optional) -1 tbsp sesame seeds (optional, for garnish) -Soy sauce or coconut aminos (optional, for drizzle)  What to do: 1. Heat a skillet over medium heat. Add the Sesame Ginger Chicken Crumble, water chestnuts and cook for 5–8 minutes, stirring occasionally until chicken crumbles are golden and heated through. Remove from heat. 2. While the chicken cooks, chop cucumbers and dice the red onion. 3. Lay out your lettuce leaves on a plate or platter. Spoon the cooked chicken crumble into each leaf. 4. Top with cucumber and diced red onion, if using. 5. Sprinkle sesame seeds over the wraps and drizzle with soy sauce or coconut aminos for extra flavor. 6. It's Day 3 of Eats & Beats and we’re keeping it creamy, spicy, and a little sweet!Let's get into this Creamy Paprika Chicken that I served with roasted broccoli and hot honey sweet potatoes (I'll throw that simple recipe below too). Let me know if you try this recipe,  I'd love to hear your thoughts.  What you'll need: For the Chicken: • 3 boneless, skinless thinly sliced chicken breasts (for faster cooking) • 1 cup chopped spinach (optional) • 1 tsp smoked paprika • ½ tsp garlic powder • ½ tsp onion powder • ½ tsp salt • ¼ tsp black pepper • 1 tbsp olive oil • 1 cup Unsweetened Almond milk  • 1 tsp whole grain mustard • 1 tsp lemon juice • 2 tbsp baking powder 2 tbsp water (to make a slurry) For the Roasted Broccoli & Sweet Potatoes: • 2 cups broccoli florets • 1 large sweet potato, diced • 1 tbsp olive oil • ½ tsp smoked paprika • ½ tsp garlic powder • Salt & pepper to taste • 1 tbsp Mike’s Hot Honey (for drizzling) What to do: • Preheat oven to 425°F. Toss sweet potatoes with ½ tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 10 minutes. • Add broccoli to the sheet, drizzle with remaining olive oil, and season with salt and pepper. Roast everything for another 15 minutes until crispy. • While veggies roast, season chicken with paprika, garlic powder, onion powder, salt, and pepper. • Heat a skillet over medium-high heat with 1 tbsp olive oil. Sear chicken for 3-4 minutes per side, until golden brown and cooked through. Remove from the pan. • In the same pan, add  mustard, slurry mixture and lemon juice. Stir, then reduce heat to low and whisk in almond milk until smooth. Add spinach, if using.  Return chicken to the skillet, coating it in the sauce. Add to hot skillet with 1 tbsp oil and two tbsp of butter, cook chicken until golden brown (about 3 minutes each side) and remove from the pan.  In same pan add in 1 tbsp extra virgin olive oil, minced shallot and minced garlic. Sautee for 3 minutes.  Add in rinsed rice and toast for 1 minute or until golden brown.  Add in juice from lemon, capers, and bone broth. Mix well. add chicken back into pot cover, top with parsley and let simmer for 15 minutes.
