Leftover GLOW UP &  make it gourmet 🍂✨ Squash (previous post) roasted to perfection on the @traegergrills finds new life as delicious ravioli, swimming in a decadent brown butter sage sauce & crowned with freshly grated Parmesan.  Who knew leftovers could taste this good?  🍃👩‍🍳 Brown butter sage roasted Squash Ravioli  Squash Filling: 2 c leftover smoke roasted squash room temp 1/2 c whole milk ricotta cheese 1/4 c fresh grated Parmesan cheese 6 cloves smoke roasted garlic  1 tsp dried chives  1/4 tsp fresh grated nutmeg Salt & pepper to taste Pulse all ingredients in a food processor.  Set aside.  For the Pasta Dough: 2 1/2 c 00 flour (plus extra for dusting) 3 large eggs 1 large egg yolk  1 tbsp olive oil 1/2 tsp fine kosher sea salt 1/4 tsp Orange gel food coloring (optional) or a tbsp of tomato paste  In a food processor add flour eggs yolk oil & salt.  Pulse until dough comes together completely.  Rest 30 mins. Remove & knead for 10 Min on a floured counter until smooth & pliant. Roll out by hand or use a pasta machine (6/7)  to form thin sheets. Cut pasta sheets into equal rectangle lengths. Place tablespoons of filling every couple of inches. Cover with second sheet. Press with a ravioli press or bottom of a cup to cut out or close. Seal edges. Repeat until all dough is used.  Bring a large pot of water to a boil. Add 2 tsp @redmondrealsalt kosher sea salt. Add ravioli and boil for 4-5 minutes. Drain.  For the Sauce: ⭐️Make sauce when ravioli are boiling  4 tbsp unsalted butter Fresh sage leaves (about 8-10) Salt/ pepper Freshly grated Parmesan cheese for garnish Add butter & sage plus a pinch of salt to saucepan. Melt butter until it starts to turn a rich golden brown colour. Remove from heat taste and add salt & pepper. Let’s kick off the new year with crispy edges and cheesy goodness! 🎉  Who wants a slice 🍕??  Detroit style pizza  2 - 16oz fresh pizza dough balls (or make your own from scratch)  16 oz *freshly shredded @kraft_brand  low moisture mozzarella or a Wisconsin Shredded Brick cheese  1 cup *freshly shredded Parmesan  8 oz @belgioiosocheese mozzarella pearls  1 13.4 oz @delgrossodish pizza sauce  6oz @boarshead_official Pepperoni  2 tsp Italian seasoning  3 tbsp olive oil  Place the dough balls on a baking sheet and cover with plastic wrap. Rest for 1 hour or until room temperature  Brush olive oil to coat the bottom and sides of the pizza pan Stretch dough to fit the bottom of the pan. Cover with plastic wrap  Rest for 1 hour Spread the pizza sauce to cover the dough right to the edge. No sticking, just pure flavor. 🐟🍯🍶 Honey miso garlic salmon  1 lb salmon filets skin on  @redmondrealsalt Real Salt Garlic Pepper  For the glaze :  1 tsp white miso paste  1/4 cup Honey  (B grade)  3 tbsp Light soy sauce  2 tbsp Minced garlic  1 tbsp Ginger paste  1 tbsp toasted sesame oil  1/2 tsp White pepper  Preheat Traeger to 350F   *My hopper was filled with Traeger Turkey blend pellets (Maple/Hickory) it just works.  In a small pot bring all glaze ingredients to a boil for 3-4 minutes whisking until the sauce has thickened. Set aside to cool to room Temperature  Season salmon with garlic pepper then place salmon skin side down on Traeger butcher paper.  * the skin will stay on the paper when grilled  * If you would like to eat the skin spray the Traeger butcher paper with nonstick spray first Glaze salmon every 5 to 10 minutes serving any additional glaze on the side to finish.  2 Tbsp Onion Powder 2 Tbsp Old Bay seasoning 
 2 Tbsp mustard powder 
 2 Tbsp Dijon Mustard  2 Tsp Black Pepper
 1 Tsp Chipotle Powder 
 Topping:
 2 Cups Panko Breadcrumbs
 1 Stick unsalted Butter Melted 2 Tbsp Badia Complete seasoning 
 2 Tbsp Dried Chives
 1 Cup Shredded Parmesan 
 (Mix toppings together & set aside)  Sliced Green spring onions
 INSTRUCTIONS 
 In a large pot melt butter & flour together on medium heat. Whisk for 4-5 minutes until there are no lumps and bubbling hot. 
 Add in evaporated milk and bring to a simmer
 Add in chives, garlic paste, pepper, mustard powder, mustard, old bay, onion powder, chipotle and whisk. 
 Add in milk & bring to a simmer
 Whisk in all of the cheese a handful at a time until melted. Remove from heat
 Pour cheese over cooked pasta and
 fold in chopped lobster meat. Pour into one buttered 9x13 grill proof pan or a couple of 9” cast iron pans. 
 Sprinkle on topping
