High Protein, High Fiber, Low Carb Pumpkin Muffins 🍁 Ingredients: * 1 1/4 cup Grain Free Planet baking mix OR     * 1 cup almond flour, 1/4 cup coconut flour, 1 teaspoon baking soda. ½ teaspoon baking powder, ½ teaspoon salt * 1 serving cinnamon or vanilla protein powder  * 2½ teaspoons pumpkin pie spice * 1/4 teaspoon ground cardamom (optional) * 1 cup pumpkin puree  * 1/3 cup allulose  * 2 tablespoons brown sugar substitute  * 1/4 cup avocado oil or melted coconut oil  * 1/4 cup  milk  * 3 large eggs * 1 teaspoon vanilla extract * Optional Mix-ins: 2 tablespoons chopped walnuts or sugar-free chocolate chips for added texture. Instructions: 1. Preheat the Oven:     * Preheat the oven to 425°F and line a muffin pan with paper liners or use a silicone muffin tray. 2.
