Easy high protein breakfast meal prep! Recipe 👇🏼 12 eggs 1 c low fat cottage cheese 1 c spinach 1/2 c peppers/onions Few tbsp of bacon bits (I like the black label ones) Sprinkle of light Mexican cheese Salt, pepper and garlic powder Blend cottage cheese and eggs in the blender, spray 9x13 and pour egg mixture. Mushroom Goat Cheese Egg Bake!! I know I say this every time but this really is my favorite version of the egg bake that I have done so far. It made my kitchen smell DIVINE!! Let me know if you try it out.  How to:  + Add 8 eggs and 1 cup low fat cottage cheese to a bowl. Season with salt, pepper, garlic powder, and onion powder and whisk until combined.  + Line an 8x8 pan with parchment paper and add 1 cup chopped mushrooms and 2 cups of arugula. Pour egg mixture over veggies and top with crumbled goat cheese and extra seasoning.  + Bake at 375 for 30 minutes.  + Serve with fruit or toast.  #eggbake #breakfastmealprep #eggbakerecipe
