Feta Spinach Egg Bake (Great vegetarian option, higher in protein, lower in carb) -1 10-ounce package frozen chopped spinach (thaw it and squeeze the water out)
-1/2 cup scallions, finely chopped
-3/4 cup chopped artichokes, drained and patted dry
1diced red pepper
-2 cloves garlic
-1 tablespoon dill weed
-8 eggs
-4 egg whites
-1/4 cup of milk
-1 teaspoon of salt
-1/4 teaspoon ground pepper
