Recipe from @Morgan Peterson Crockpot Lasagna Soup: - 1.5 lb ground beef - 1 medium yellow onion - 1 red bell pepper - 24 oz jar marinara (Rao's is my fav!) - 14 oz can diced fire roasted tomatoes - 5 cups low-sodium chicken stock - 1/2 - 3/4 package lasagna noodles - 2 cloves garlic - 3 tsp Italian seasoning - Salt & pepper to taste - Parmesan, mozzarella, & ricotta for topping Cook ground beef on the stovetop until broken up & slightly browned (about 5 minutes). Add ground beef, red pepper, garlic, onion, marinara, fire-roasted tomatoes, chicken broth, and seasonings to the crockpot. Cook on high for ~4 hours (or low for 8). With 30 minutes left, add lasagna noodles for remainder of cooking time. Serve with desired cheese for topping & enjoy!
