Recipe: Ingredients-  Fresh wild cod fillets (around 2.5 pounds) 6 Campari tomatoes, cut to quarters  10 cherry tomatoes  2 peppers, cut to chunks 1 shallot, cut to quarters 1/2 red onion, cut to quarters  1 jalapeño pepper, cut to stripes without the seeds 1 lime, sliced to circles  1 lemongrass, cut on the long side  Handful of fresh basil  Spices mix ingredients- 1 teaspoon of salt  1/2 teaspoon of black pepper  1 teaspoon of paprika  1 teaspoon of coriander  1/2 teaspoon of cumin 1 teaspoon of sumac  Put all the spices in a bowl and mix them.  Fish topping ingredients- 6 tablespoons of olive oil  1 teaspoon of date syrup  Juice from 1/2 lemon  Method-  1. Preheat the oven to 420F / 220C. 2. Place the cod fillets in the center of a baking pan with parchment paper. 3. Arrange all the veggies and fresh basil around the fish.  4. Add the lemongrass on top of the veggies.  5. Sprinkle the spices mix on top of the fish and the vegetables.  6. Drizzle olive oil, date syrup and lemon juice on the fish. 7. Massage the fish with your hands to make sure everything is covered with the spices. 8. Bake it on 420F for 25 minutes. 9. Transfer to convection broil on 450F for 7-8 minutes to get a nice golden brown color. 10. Remove the lemongrass and serve! Enjoy! This chickpeas and fish stew is one of those simple dishes that are hearty comforting and quite memorable thanks to its unique fragrant touches. The mix of saffron, white wine, cilantro and tomatoes makes the broth incredibly tempting, while the fish and chickpeas make the stew nutritious and hearty. * 		1 tablespoon neutral oil  * 		1 large onion, diced * 		2 Serrano pepper thinly sliced  * 		3 large garlic cloves, chopped * 		1/4 cup  fresh cilantro (coriander) stems, chopped *              1 tbsp Aleppo pepper  *               1 tbsp paprika  *               Salt  * 		1/2 cup dry white wine ( optional )  * 		1 pinch saffro * 		2  bay leaf  * 		1 large tomatoes slice  * 		1 can (16 oz chickpeas  * 		1 1/2 cups  fish stock * 		1 lb tilapia cut into medium pcs or any white fish  * 		A handful of fresh cilantro, roughly chopped  Add paprika and slat to fish rub to well and set aside  Drain and washed the can chickpeas  Heat the oil in a large stock pot and saute the onion and  pepper for 4-5 minutes over medium heat until slightly softened. Stir in the garlic, aleppo pepper chopped cilantro  and continue to cook for 1-2 minutes. Add the white wine, saffron and bay leave and allow to bubble for 2-3 minutes until the liquid is reduced to about a half. Add the tomatoes and break them down with your spoon, then stir in and fish stock  Bring to a boil, then lower the heat, cover the pot with a lid and simmer for 15 minutes. Uncover and  add the chickpeas and fish on  and push gently so they’re covered in liquid. Put the lid back on the pot and simmer for 10 minutes until the fish is cooked through. Ingredients: 2 pound cod fish or any fish of your choice   2 tsp salt 1 tbsp slightly crushed cumin seeds  1 tbsp slightly crushed coriander seeds  1 tbsp fenugreek leaves  1 tsp crushed carom seeds  1 tsp crushed red pepper  1 tbsp Kashmiri red chili  1 tbsp garam masala  1 tsp ginger powder  1 tsp garlic powder  1 tsp turmeric powder  Dash of red food coloring  6 tbsp gram flour  1/4 cup water (more or less) 2 cups oil for frying  Instructions: You need a meaty and mild flavor of whitefish. I like to use cod but honestly any fish that isn’t too easy to fall apart works for this recipe. Make sure fish isn’t too watery. And don’t add water immediately after adding the dry batter. Mix it and let it sit for 5 minutes. Only then you’ll be able to judge how much water it actually requires to make a thick coating.  Crush all whole spices and add it in a bowl. Then add additional spices and finally gram flour. Mix well. Sprinkle it all over the fish and mix. Add a bit more water depending upon how much water your fish contains. Let it rest for 30 minutes.
