I’ve seen Parmesan crusted steaks on menus before, but never felt like it was worth getting… well I’ve officially changed my stance on that after trying it a few times myself!  Ingredients for Parmesan crust: • 1 cup of Mayo • 1 cup of Parmesan (I usually add a little extra!) • 1 tbsp thyme • 2 cloves minced garlic Just mix that together in a bowl and you’re set! The recipe for the steak is simple!  Reverse sear over charcoal or in your oven/smoker at 225°F until the internal hits about 120° and if you like it more on the rare side, aim for 110°-115°F. Then you want to take it out and coat the top with the Parmesan mixture.  Broil for atleast 5 minutes, and pull it out when the internal hits 125-127 and let it rest! I like to rest it for 10-15 mins.  Then slice it up and enjoy! I found out that people used to use some very unique things to smoke and flavor to their meat back in the day, and I’ve picked a few to try out for myself starting with this one!  I picked up some Fresh Pine Needles from a tree farm, and like I mentioned in the video… please pay attention to where you get the pine needles before using them with your food!  This cook was about 20-25 minutes in total on my @FYRSTARTER grill, and I used lump charcoal and a lot of fresh pine needles to get the steak up to 110-115°F before dropping it close to the coals for a final sear. I recommend pulling it off when the steak hits 125° internal for a ribeye cooked this way! It’ll rest up to 132-134° Then just make sure to rest it for atleast a 7-10 mins, and then slice it up and enjoy!! Are you Smashing this?!  I was in the mood for a gyro, and wanted to try something new and more approachable that making a traditional gyro meat… and this was amazing!  The gyro meat: • 1.5-2 lbs of Ground Beef • 1 tbsp each of Salt & pepper - use less if you prefer • 1.5 tbsp ground cumin • 1- 1.5 tsp garlic powder • 1 tsp onion powder • 1 tsp ground coriander • 1 tsp dried oregano • 1 tsp smoked paprika Just mix everything into the meat and you’re all set! I like to let it sit covered in the fridge for 30 mins or so to develop a bit.  To make the gyro, just smash a generous amount of the seasoned beef onto a pita, and set aside. Melt down some Ghee over medium heat, and place the pita in, meat side down.  Cook for 3-5 minutes depending, I usually start checking it after 3 minutes. When the beef is cooked through, take it out and let it rest on a wire cooling rack so the pita doesn’t get soggy on the bottom.  Top it off with your favorite pita toppings like tzatziki, lettuce, tomato, red onion, and feta! Pintad Oma ak Nwa with Sauce Kreyol and Manyok: Whole guinea fowl, lobster claw, Kreyol lobster and guinea jus, crispy yucca pavé, confit onions, caramelized onion jam, and crispy kale. Drawing inspiration from my childhood, this dish is a modern take on one of my favorites, Pintad ak nwa (Guinea fowl and cashews). I used the whole guinea fowl: the breast for a mousse, the dark meat confit, and the skin crisped up like bacon. The lobster claw was folded into the mousse, while the bones and lobster head were used to create a rich jus. This is the ultimate grilled cheese!! A Beef Tallow & Steak Grilled Cheese!!  Ingredients: • Chuck eye steak/ribeye • @Maldon Salt  • 2-3 tbsp Beef Tallow @South Chicago Packing  • 2 pieces of Country style bread or sourdough • Beef Tallow Mayo - see recent video! • 4 slices of Havarti cheese 1. Start by seasoning up the steak, and I recommend tying it up with twine for the first part of the cook. You can cut it off about 2 minutes in! This just helps an even cook and holding the chuckeye together.  2. Melt the beef tallow in a heavy bottom pan, I’m using the Staub X @busterandpunch works insanely well for both the steak and sandwich.  3. Add the steak, cook for 2-3 mins per side, flipping every 30 secs or so for an even cook and crust.  4. Remove and let rest for 5 - 7 minutes or so, then slice and clean out the pan.  5. Coat the bread slices in the beef tallow mayo, then over medium low to medium heat, place down a slice of bread, followed by 2 slices of Havarti, and a generous amount of the steak. Top that off with 2 more slices of cheese and then the top piece of bread.  6. After the first flip, use a press or weight to get a really good even cook on the bread and help everything melt together!  7. After the cheese is melted and the bread is evenly toasted, remove the sandwich and enjoy!! Recipe Below! 👇  Every time I use mayo in a video, I get a ton of comments saying “oh no, there is seed oils in there…. Don’t use that” sooo this should make you happy if you’re one of those people 😉😂 It’s a beefy mayo that you’ll see works incredibly well on a grilled cheese!  Ingredients: • 1 cup Beef beef tallow, melted.  • 3 egg yolks • pinch of salt 1. Start by melting the beef tallow, then let it come down to slightly above room temp so it’s still liquid.  2. Then add 3 cold egg yolk to the tallow, and immediately use an immersion blender to emulsify. Now you can slowly add the tallow to the eggs vs doing it this way if you’re concerned about the mayo breaking! I haven’t had an issue though.  3. Add a pinch of salt, then blend once more before covering and letting it setup briefly in the fridge for 5-10 mins. If needed, whip with a fork or spoon to get the consistency right. This was a first for me using this cut… and I’m Hooked!!  What should I make next using the Santa Maria?! One of my favorite parts of my @FYRSTARTER Grill is the Santa Maria Attachment. I’ve never had access to one, and learning something new while cooking with live fire is a major passion of mine!  Like I mentioned in the video, this method uses a specific type of grill that utilizes an adjustable grate. Typically a hand crank system, but I’ve seen others.  You control the heat by using the adjustable grill grate to manage the distance from the fire.  For this Tri-Tip, I used FYR RED Hot sauce as a binder and seasoned it up with @chilesandsmoke Canyon Crust and @Al Frugoni Chimichurri.  Then I cooked it over @Jealous Devil charcoal with some wood chunks for extra flavor!  The cook time varies, but usually 10-20 mins for this cut! I tend to run mine at a little lower temp early to take on more smoke until it reaches an internal of 110-115°, and then sear it hot and fast at the end! Do not cook to a time, and until you get comfortable managing the feel of cooking with live fire, don’t be too proud to use a thermometer! It just helps ensure a perfect cook!
