Recently, despite not having all the ingredients and being pressed for time, I decided to make it anyway to curb my craving. Thankfully, I had galangal and lemongrass on hand. Alhamdulillah, as long as the percik sauce flavor is there, the craving is satisfied. 🤍Next time, I’ll make the full version of ayam percik with all the ingredients. 🤍What is Ayam Percik? Ayam percik is a traditional Malaysian grilled chicken dish, known for its smoky flavor and creamy, aromatic coconut milk-based sauce. The chicken is marinated in a blend of spices, including turmeric, ginger, galangal, lemongrass, and garlic, before being grilled over charcoal. It is then basted generously with the signature sauce made from coconut milk, chili, tamarind, and spices, giving it a rich, savory, and slightly tangy flavor. Ayam percik is typically served with steamed rice and is a favorite at street food stalls, Ramadan bazaars, and festive occasions. Below is the improvised recipe: 🛒 Ingredients • 1Kg Chicken with bones, cut into prefered size • Cooking Oil • ½ large red onios, dice • 1 thumbsize ginger, peel & julienne • 5 cloves garlic, slice • 1 thumbsize galangal, julienne • 3 lemomgrass, bruise • 1 small canned tomato paste • 1 cup water • Dry Ghost Pepper ( Super spicy than Habanero) • 1 cup Coconut milk • Salt, Sugar & Chicken Stock • Green peas 👅Taste taste taste adjust accordingly 👩🍳Method as shown in the video 🍽 Serve with rice & budu sambal belacan or pasta Enjoy😘 ok byeh!
