I guessed it is also popular among Vietnamese and Filipinos?  🌻Making Ayam Cencaluk is not only a great way to use up the leftover cencaluk  in your fridge, but it's also incredibly versatile. We really love and enjoyed it!  🛒Ingredients • Chicken breast with bones, remove skin • 4-5 Tbsp cencalok •1-2 Tbsp sugar 🍲Marinate the above ingredients and set aside. •Cooking Oil •8 - 10pcs shallots, slice •6 pcs garlic, slice •1 thumbsize ginger, julienned •4 Lemongrass, bruise •1 Habanero ( or chilli padi), slice •1 large onions, slice  • 1- 2 Tbsp Soya Sauce  • Tomatoes, cut into wedges 🍽Method  1. It's always such a joy to see their excitement and adventurous spirit when introduced to our beloved flavors.  🤍For every first-timer, I like to start with something classic and comforting: Masak Lemak, paired with sambal and a selection of exotic vegetables. This time, I took it up a notch with Sambal Belacan Habanero and Tempoyak—bold and unique flavors that are not for the faint-hearted!  🤍Recently, we hosted two amazing guests: Lyradd from Toronto, Canada, and Dan from Chicago, USA. For the occasion, I cooked Beef Masak Lemak, Sambal Tumis Tilapia Fish, and sautéed garlic bok choy.  🤍This was Lyradd’s third time enjoying Malay food at our home. On his first visit, I cooked him Beef Rendang and absolutely loved it. He loved it so much that he requested it again on his second visit! (Unfortunately, I didn’t get the chance to record his reactions on either occasion.)  🤍For Dan, however, this was his first-ever experience with Malay cuisine. We were thrilled to see him dive right in and embrace the boldness of the Sambal Belacan Habanero and the acquired taste of Tempoyak!  🤍Seeing both of them savor every bite and genuinely enjoy the food was heartwarming. Moments like these always remind us why we love sharing our culture through food. The best part? Time for Easy Beef Sinigang 👨‍👧Kids’ first day back at school after winter break, and the house feels so quiet. 👨‍👧With lunch to prepare and a 3 PM school pick-up looming, I needed something quick and comforting—Beef Sinigang was the perfect choice.  🍵This tangy Filipino soup, similar to Malaysia’s Singgang, is so versatile and easy to make with Sinigang powder. Homemade chicken stock and Sambal Belacan Habanero are fridge essentials in our home—you know why, right? Next on the replenishment list: chili paste and tempoyak!  2. Speaking of sambal, I ran into a small challenge while blending it. We've used up all our voltage converters for the Malaysian electricals we brought over. My husband suggested I blend the sambal belacan on the floor near the nearest converter. So, there I was, blending away in the most "efficient" spot!  3. Despite the winter storm and a no-school day for the kids, it turned out to be a productive one. I only make something fresh after we’ve finished all the leftovers. 🤍We rarely eat out or order in. 🤍As for this recipe, you can use 3 chicken breasts for 1 packet of spaghetti. Staying true to our fusion food concept, I needed to simplify the preparation of the fish gravy while maintaining its authentic flavors—and find a creative solution for the noodles without compromising the dish.  🥙 In 2018, Laksa Taft was born: a Kelantanese Laksa infused with Italian elements, named after my restaurant, TAFT (The Artisan Food Trail). Its unique twist and rich flavor quickly made it one of our signature dishes, beloved by many.  🤍I've shared the Laksa Taft recipe many times before, but just in case you missed it, here it is!🤍 🛒INGREDIENTS Serves : 2 - 4 pax 👩‍🍳The ingredients are divided into 4 components. 🐟Fish Gravy- To blend  •  3 canned Tuna in mineral water, discard water • 1 thumbsize piece ginger,peel and slice • 3 cloves garlic, peel • 8 shallots, peel - Other ingredients for the fish gravy • 1 cup coconut cream or cooking cream • 1 cup water ( use boiled pasta water) • 1 canned tuna ( optional ) • 1 Ginger Flower/Torch or 1 bunch daun kesum (rau ram or vietnamese coriander)  • 3 Lemongrass, bruise • 3 pcs dry tamarind or freshly squeeze lenon juice • 1 tsp ground black pepper, pound course size • 1 Anchovy stock or any food seasoning • Salt and sugar to taste 🍝Laksa Taft Noodles •Rigatoni or Penne or Lingune, boil to aldente 🥗Salad of veggies & herbs • Cucumber (julienned) • 1 quarter of a small white or purple cabbage (thinly sliced) • Long beans (thinly sliced) • 1 small bunch of  Daun Kesom (Vietnamese coriander) • 100g bean sprouts  •  Italian Basil / Rocket Salad • 1 lime (cut into wedges) 🌶Sambal Habanero Vinegar • 3 fresh Habanero OR if you can't take the heat use red chillies  • 1 tbsp belacan (toasted) • 1 tsp sugar • 1tsp salt • ¾ tbsp lime juice  • 1 tsp vinegar 👅Taste taste taste adjust accordingly 👩‍🍳Method is wriiten &  as shown in the video  🍽To serve Place pasta onto a plate. No-Fuss 4-Ingredient Roast Chicken Tips : 1. Generously season the chicken with salt, and leave it uncovered in the fridge for at least an hour and up to 24 hours. The salt draws moisture out of the chicken, then dissolves and allows the chicken to reabsorb it. The longer it sits in the fridge, the more flavorful it becomes and the crispier the skin will be. 2. Pat dry -once you take out the salted chicken out - PAT DRY - Doing this will remove any excess moisture from the chicken, which is what gives you soggy skin. That moisture creates steam in the oven, and the more steam, the less crisp the skin and drier the meat. 3. Roasting Chicken- temprature 160°C - 180°C for 1hr 30mins  -Baste the chicken after 45mins, and turn it around.  4. I accidently put too much 🤭 Simmer for 4 minutes, then drain the beef and set aside. • Once cool slice the beef . Slicing beef "against the grain" . This is to shorten the muscle fibers within the meat, making it significantly more tender and easier to chew. • Keep all of the water from the boiled beef. You might have to use it all.  👩‍🍳Sauté Ingredients • 5 cloves garlic, with or without skin, crush • 1 large yellow onions, slice • 2 habaneros, julienne  👩‍🍳Vegetables • Long beans or  sub with french beans  • Carrots  • 3 colors bell pepper • Baby corns • Kaffir Lime Leaves ( cut half , remove the spine, gently crush them to release their aroma before adding them to the gravy • Tomatoes ( I didn't have it when I was cooking this dish  👩‍🍳Sauces and Seasonings ( please adjust accordingly)  • 3 tbsp chili paste • 2 Tbsp chili sauce • 2 Tbsp oyster sauce • 1 Tbsp tomato ketchup • 1 Tbsp squid brand soy sauce • Food seasoning • Salt • Sugar  👩‍🍳👩‍🍳Instructions 1. Heat up oil in a pan and sauté the garlic, shallots, and onion until fragrant. 2. Add chili paste and cook until the oil separates.  3 Add water from the boiled beef until your prefered consistency. 4. Stir in the chili sauce, oyster sauce, tomato ketchup and fish sauce. Mix well. 5. Add the beef and stir to coat evenly with the sauce. 6. Toss in the vegetables and kaffir lime leaves. So what exactly do you do with this white block of food? Since alot of people are put off by the texture, I recommend grating the tofu and then seasoning it. Let me me know if you try the recipe below, ⬇️ I think you will love it Question: What do you do when you you want to make egg rolls, but you don’t have any egg roll wrappers? Answer: use tortillas and make egg roll quesadillas instead 🌱Easy Egg roll Quesadillas 🌱 1 tbsp oil 8 oz extra firm tofu 1 cup grated cabbage 1/2 cup grated carrots 1 tbsp toasted sesame oil 1 tbsp garlic powder 1 tsp ginger powder 2 tbsp tamari 1 tbsp coconut aminos 1 tbsp sesame seeds 1 tsp white pepper 3 large tortillas cut in half Dipping sauce: 1 tbsp tamari 1/2 tbsp gochujang 1/2 green onion chopped 1 tsp sesame seeds Grate the tofu , cabbage & carrots Heat a large frying pan, add the oil. Add the tofu, cabbage and carrots and sauté for 1 -2 minutes. Add the garlic , ginger, sesame oil, tamari, coconut aminos, sesame seeds and pepper. Cook for about 5 minutes more Place 1/2 of the tortilla in a plate . Add a scoop of of tofu mixture to the middle and fold in each side. Continue until all of the tortillas are filled Heat a large frying pan over medium high heat and add some oil.
