Recipe for German Flammkuchen from scratch! Flammkuchen Dough: 3½ cups Flour 1 cup Water ½ tsp Salt 4 TB Olive oil Topping: 8 oz Sour Cream or Crème fraîche 1 Block Swiss Cheese 1 lb Bacon 2 Onions Salt & Pepper to taste Preheat oven to 500F Combine the ingredients for the dough and knead until it forms a ball. Divide in half (1 half for one cookie sheet) Roll out THIN I use olive oil on the cookie sheet to prevent sticking, you can use parchment paper instead. Fry the bacon (not super crispy as it will continue cooking in the oven), then the sliced onions in the bacon fat (again, not super crispy) Top the dough with the sour cream, salt, pepper, cheese, bacon, onions. Bake on bottom rack for about 10 to 12 minutes or until the dough and cheese are golden brown. Enjoy!
