Tahiri. Flavorful rice dish made with potatoes and that gold hue is achieved by adding turmeric. I love adding dried plumps for subtle tanginess in every bite!  Ingredients: 1 1/2 cups basmati rice  1/4 cup cooking oil  1 tsp cumin seeds  2 black cardamom  1 cinnamon stick 2 medium thinly sliced onions  3 medium peeled & sliced potatoes  2 tbsp freshly crushed ginger/ garlic  2 tsp turmeric powder  1 tsp coriander powder  2 tsp salt  2 medium thinly sliced tomatoes  3 green chili peppers  Chopped cilantro  1 1/2 cup water  6-8 dried plumps  Cucumber yogurt on the side  Instructions: Wash and soak the basmati rice for at least 30 minutes before cooking.  In a pan add oil. Once hot add the whole spices. Mix it around for 20-30 seconds before adding in the onions. Cook it down a little until it slightly browned. Now add potatoes. Mix and let it cook for 5 minutes before adding ginger/ garlic. Mix well and let that cook for additional 5 minutes. Now add the spices and mix it well. Time to add tomatoes and green chillies. Mix and cover. Let it cook for 10 minutes on low flame. Uncover, mix and add pre soaked basmati rice.  Mix and the add chopped cilantro and water. Make sure the rice is completely submerged. Mix and then add dried prunes on top. Cover and let it simmer on low flame for 30-40 minutes. Fluff it before serving. Makhandi Halwa. My second most favorite sooji halwa on this planet earth! Semolina soaked in milk then cooked in caramelized  sugar is what gives this dessert its special flavor.  Ingredients: 1 cup sooji (Semolina) 2 cups milk  4 crushed cardamom seeds  1 cup ghee  8-10 Cashews 5-6 Almonds  1 tbsp Raisins  1 oz sliced dry coconut  1 cup sugar  Pistachio for garnish  Instructions: In 1 cup sooji (Semolina), pour 2 cups milk (lukewarm). To it add 4 crushed cardamom seeds. Soak for an hour. You will then need 1 cup ghee. Now add 1/4 cup of ghee and toast Cashews, Almonds, Raisins and Sliced dry coconut. Toast until slightly golden. Remove and then add 3/4 cup ghee. Now add 1 cup sugar. Slowly cook until the sugar caramelizes. Then gently and carefully add semolina/ milk mixture to the caramelized sugar.  Now cook until all the milk is evaporated and observed by Semolina. Now decorate with cashews and pistachios by placing some at the bottom of a bowl. Then spooning halwa on top. Press it in gently with a spoon. Finally flip and serve with chai. Pepper Chops! My most repeated recipe. It’s easy and comes out incredibly juicy and tender.  Ingredients: 2 pound t-bone chops  1/4 cup cooking oil  2 medium sliced onions 1 tbsp crushed garlic  1 cup yogurt Salt and pepper to taste  Green chili, ginger for garnish  Instructions: Heat a pan and pour in the oil. Once hot add sliced onions. Cook until softened and the color changes slightly to golden brown. Next add crushed garlic. Sauté for 3-5 minutes. Next carefully add the chops. Make sure you cook it evenly before adding in salt and pepper. Finally add the yogurt. Mix and cover. Cook on low flame for 30 minutes or until the meat falls off the bone.
