WHIPPED RICOTTA WITH GARLIC & HERB DIPPING OIL! One of everyone’s faves—new Year’s is here and this is the perfect way to ring it in 😉 • Time: 15 minutes Serves: 6-8  • For the oil: 1/2 cup olive oil  1/4 cup finely chopped parsley  1 tbsp fresh chopped rosemary  2 tbsp fresh chopped basil 3 cloves minced garlic  3/4 tsp sea salt 1 tsp red pepper flakes  1 1/2 tbsp balsamic vinegar  • For the ricotta: 3 cups ricotta  Juice of 1/2 lemon  Zest of 1/2 lemon  1/2 tsp salt  • Toppings: More parsley/red pepper • 1️⃣Make ricotta—mix all ingredients together with mixer and set aside.  2️⃣Make oil, heat the olive oil over medium heat then add the herbs once it is hot. Cook for 10 seconds then add garlic, oregano, salt and red pepper flakes. Cook for another 10 seconds, until fragrant. Add the balsamic and mix. Once cool, add the Parmesan and mix.  3️⃣Spread ricotta onto a plate, create a divot in the middle and add the oil, then drizzle the top. Top with parsley and red pepper flakes. SLOW ROASTED HONEY-DIJON SALMON WITH PECAN-FETA-DATE CRUMBLE! Using my infamous crumble to make a salmon “crust”—10/10! • For the salmon: 1 1/2 lb salmon filet Salt 2 tbsp Dijon mustard  1 tbsp honey Olive oil  • For the crumble: 1/2 cup raw pecans 5 large dates 2 oz feta cheese Handful arugula  1/2 tsp salt Pinch red pepper flakes  Zest of 1/2 lemon Tahini, optional for serving  • 1️⃣Preheat the oven to 275. Line a sheet pan with parchment paper. 2️⃣ Make the crumble. Add the pecans and begin to chop them, then add the dates and do the same. Continue to add the feta and arugula, chopping after each ingredient is added. Add the salt, pepper flakes and lemon zest and chop until the mixture is combined and a “crumble” is created. 3️⃣Next, make the mustard mixture. Add the mustard, honey and a pinch of salt to a small bowl and mix to combine. 4️⃣Place the lemon slices in a rectangle on the parchment lined sheet pan. Place the salmon on top of the lemons, then salt the salmon. Add the mustard mixture to the top of the salmon, then brush it over the top. Next, add the crumble and spread it evenly over the top of the salmon. Drizzle the salmon with olive oil. These tacos have cilantro lime pulled chicken, pineapple jalapeño salsa & fresh guac layered on warmed tortillas 😊✨🌮🥑🍍 Ingredients: -tortillas (I used corn) for the chicken: -3 chicken breasts -cilantro lime marinade (I used Wegman's, but you can used whatever you like really!) for the guac: -2 diced avocados -1/4 onion finely chopped -cilantro finely chopped -lime (or lemon) juice -salt & pepper for the pineapple jalapeno salasa: -1 c finely chopped pineapple -1 jalapeño cored and finely chopped -1/4 onion finely chopped -cilantro finely chopped -lime (or lemon) juice -salt & pepper optional: -chipotle hot sauce (I like Tabasco)  Steps: 1. Slow cook chicken in marinade on high for 3 hours. Chicken is done once easily shredded 2. Warm tortillas in pan on medium heat (2-3 minutes each side) 3. Combine guac ingredients and mix well 4. Combine salsa ingredients and mix well 5. These Big Mac potato skins take the flavors from the classic burger but use grass-fed and grass-finished high-quality ground beef, a potato instead of a bun, lots of veggies and creamy burger sauce! They are INSANE 🤯 Ingredients 3 russet potatoes 1 lb ground beef avocado oil dash salt dash pepper 1 tsp garlic powder 1/2 sweet onion 1/2 tomato 1/4 cup pickles 1/2 cup lettuce 1/2 cup burger sauce Instructions Gather your ingredients and preheat the oven to 400°F. Pierce potatoes with a fork and place them on a baking sheet. Add oil, salt and pepper and bake for about 50 minutes. While potatoes are baking, cook ground beef seasoned with salt and pepper in an oiled pan over medium heat until lightly browned. Once potatoes are done and cooled, scoop out the insides. Add ground beef into the potatoes and cook for another 10 minutes. While stuffed potato is cooking, chop vegetables. Add onion, tomato, pickle, lettuce and burger sauce on top. These are so simple & legit melt-in-your-mouth—one last brussels recipe before Thursday 😉 • *make sure the cream is warm to pour* 1 1/2 lbs brussels, trimmed and halved 5 tbsp olive oil  1/2 tsp salt 1/4 tsp pepper 1 tbsp honey • 3 tbsp honey 1 block Boursin cheese, divided  3 tbsp chopped dried cranberries 3 tbsp chopped pistachios  3 tbsp chopped fresh parsley  • 1️⃣Preheat oven to 450. Place a sheet pan in the oven while it preheats.2️⃣Add the brussels sprouts plus 2 tbsp olive oil, the salt and pepper to a bowl. Toss to coat. 3️⃣Remove the sheet pan from the oven & add the remaining olive oil to the pan, then the brussels sprouts face down. Place in the oven for 30 minutes, flipping halfway. 4️⃣While the Brussels roast, make the Honey-Boursin cream.
