Recipe--> 🍲🥫✨ It snowed for three days straight, so a big pot of soup was on my mind 😌 This Tuscan white bean soup is a comfort healthy dinner that will warm you right up. Best part is you will have lots of leftovers (trust me you're going to want them)! Can also be made vegetarian by doubling the beans and omitting the chicken! Ingredients: -olive oil -1 white onion diced -6 cloves of garlic finely chopped -3 carrots diced -4 c cooked chicken (I used rotisserie for convenience!) -14oz can of cannellinni beans -14oz can diced seasoned tomatoes -32 oz low sodium chicken broth -2 c water -2 c brown quick rice (if using different rice, you will need to cook soup longer) -4 c kale de-stemmed and chopped -salt & pepper -1 bay leaf -Itailian seasoning optional: -shredded parm -crackers Steps: 1. In a large pot with 2 tbsp olive oil, add onions, garlic, & carrots and season with Italian seasoning, salt & pepper. Cook for 3-4 minutes stirring regularly until onions start to become translucent. 2. Add beans, diced tomatoes, chicken, bay leaf, broth & water and bring to boil 3. Once boiling, add rice and lower heat to simmer. Let cook for 10 minutes 4. After 10 minutes, add kale and let cook for another 3-4 minutes 5. Serve with shredded parm and crackers Enjoy!!
