DAY 2/30: Chicken Caesar Meatball Subs. 🥪🥗 These are inspired by another creator on here (can’t remember who) and I HAD to try to create them for dinner. Can’t wait to make these again!🤌🏻 •••••• Ingredients: Sub Rolls or Bolillo Rolls 1 lb ground chicken 2 tbsp Caesar dressing + more for topping 1/2 cup breadcrumbs 1 egg 1/4 cup shredded or grated parmesan + more for topping 1 tsp each: garlic powder, salt, pepper Romaine lettuce •••••• Instructions: 1. Add ground chicken, egg, breadcrumbs, seasonings, 2 tbsp Caesar dressing & 1/4 cup parmesan to a large bowl. 2. Mix well and form golf ball sized meatballs. 3. Heat a large pan over medium heat and add avocado oil. 4. Add meatballs to pan and cook covered for about 15 minutes, flipping occasionally until meatballs are browned on both sides. 5. Toast your sub rolls in the oven on a low broil for just a couple of minutes. Cut them open if they are not already. 6. Assemble subs: Caesar dressing, lettuce, parmesan, meatballs Enjoy!
