bc my body is craving all things savory, let’s make an easy, greek-inspired lunch!! today, we’ve got lavash layered with baby arugula, homemade beef kofta recipe made with lots of fresh herbs, pickled onions, tzatziki, and served with crispy seasoned potato wedges! the beef koftas are great on their own dipped in tzatziki, as well!! and bc i know some of yall will ask for the seasoned fries recipe, i didn’t really measure anything. i just made a thick batter from flour, paprika, salt, a little baking powder, and hot water to toss the potato wedges in (that had been soaked in cold water for 30 minutes). then fried twice until deeply golden brown, and tossed in melted butter and zaatar to finish!! so so good!! the full recipe is on my blog at abrightmoment.com
