You can find me on the other a p p for more recipes and more content 💛 Full recipes always in the captions - see you over there! ✨ Vegetable Fried Rice 1 tbsp avocado oil 1/2 tbsp sesame oil 1 small onion, chopped 1 cup frozen peas & carrots blend 3 garlic cloves, minced 1/2 tsp ground ginger 3 eggs, beaten 4 cups rice, cooked (leftover works best) 3 green onions, thinly sliced 1/4 cup soy sauce or coconut aminos In a large skillet over medium high, heat oils. Add the onion and cook until soft. Add garlic, ginger, peas & carrots, and cook for about 2 minutes. Push vegetables to one side of the skillet, add the eggs to the other side, and cook to scramble, stirring as necessary. Add rice, green onion, drizzle with soy sauce, season with salt and pepper, and stir to combine. Cook for a few more minutes, until incorporated and cooked through. Serve!
