Hibachi Shrimp and Steak Fried Rice
Ingredients:
1 ribeye steak, fat removed, cubed
2 lbs shrimp, peeled and deveined
4 eggs
2 cups cooked rice
1 onion, diced
1 cup diced carrots
½ cup green onions, chopped
Japanese BBQ sauce
3 tbsp butter
Avocado oil
Marinade:
¾ cup low-sodium soy sauce
1 tsp sesame oil
2 tbsp brown sugar
2 garlic cloves, grated
1 tsp ginger, grated
2 Tbsp Lemon Juice
½ tsp black pepper
1 tsp onion powder
Instructions:
1. Prepare Marinade:
In a small bowl, mix the soy sauce, sesame oil, brown sugar, garlic, ginger, black pepper, and onion powder.
2. Marinate Steak and Shrimp:
Place the cubed steak in one bowl and the shrimp in another.
Pour half the marinade over the steak and the other half over the shrimp.
Cover and refrigerate for at least 30 minutes, up to overnight.
3. Cook Steak and Shrimp:
Heat a large pan over medium-high heat with avocado oil.
Cook the steak in batches to avoid overcrowding. In the last minute of cooking, add 1-2 tablespoons of Japanese BBQ sauce. Remove and set aside.
Repeat the process with the shrimp, cooking until pink and opaque. Remove and set aside.
4. Scramble Eggs:
Add more avocado oil to the pan and scramble the eggs. Remove and set aside.
5. Fry the Rice:
Clean the pan if needed. Add more avocado oil and cook the diced onion and carrots until softened.
Add the cooked rice and season with black pepper, garlic powder, and onion powder.
Sauté for 3-4 minutes, then add 2-3 tablespoons of butter and 3-4 tablespoons of Japanese BBQ sauce.
Spread the rice flat in the pan and let it cook undisturbed for 2-3 minutes to caramelize. Toss and repeat until golden brown spots appear.
6. Combine Everything:
Add the cooked eggs, shrimp, and steak back into the pan.
Toss to combine and taste. Add more Japanese BBQ sauce if desired.
7. Finish and Serve:
Toss in the green onions and serve immediately with yum yum sauce or homemade ginger sauce.
