One of my favorite easy and healthy dinners! Who else has overindulged a bit too much lately? 🙋‍♀️ ✨ INGREDIENTS ✨ * 3 Tablespoons Oil * 1 lb. lean Ground Beef * 1 Bell Pepper * 1 onion * 1 14 oz. fire roasted diced tomatoes * 1/2 tsp. Smoked Paprika * 1/2 tsp. Dried Oregano * 1/2 tsp. Garlic Powder * 1/2 tsp Onion Powder * 1/2 tsp. Italian seasonings * 1/2 tsp. pepper * 1/2 tsp. salt * 4 Cups Green Cabbage * 2 Cups Shredded Cheddar-Jack Cheese blend ✨INSTRUCTIONS ✨  1. Chop the onions, peppers and put them together in a medium bowl. 2. Chop the head of cabbage into narrow strips about two or three inches long by 1/2 inch wide. Set aside. 3. Set your skillet to medium heat. 4. Add the oil. 5. Add the hamburger and sprinkle it with salt, pepper and other spices. 6. Break apart the hamburger into small evenly sized pieces. 7. Cook until browned. Remove from skillet and set aside 8. Pour the chopped onions and peppers into your skillet and cook a few minutes until tender. Finish: 1. Add the browned hamburger back into the skillet. 2. Add the fire roasted tomatoes and stir together. 3. Pack the chopped cabbage slices over the hamburger mixture and cover with a lid. 4. Cook until cabbage is wilted. (about 15 minutes-check and stir occasionally) 5. Remove cover and add shredded cheeses 6. Cover and let the cheese melt 5 minutes. 7. Refresh spices as desired. 8.
