HEALTHY WEEKLY MEAL PREP☺️ A few things I prepped to set myself up for a successful week and to start the new year off right! Protein Chocolate pudding: (3 servings) -2 1/4 cup greek yogurt -2 avocados -3 tbsp cacao powder (add more to make it more chocolatey) -3 tbsp honey or maple syrup -1 tsp vanilla -add all ingredients to a blender or food processor and blend until smooth and creamy, store in fridge up to 3 days No Bake Caramel Date Energy Bars -6 medjool dates, pitted, soaked and drained -1/2 tbsp coconut oil -2 tbsp nut butter -2 cups nuts, I did 1/2 cup almonds, 1/2 cup walnuts, 1/2 cup pecans, and 1/2 cup sunflower seeds (any combo of nuts will work) -1/2 cup chopped dark chocolate -1/4 cup shredded coconut (optional) -add dates, coconut oil and almond butter to a food processor and blend until a paste forms -add all remaining ingredients to food processor and blend until a dough forms -line a baking sheet with parchment paper and pack dough tightly into a thick square -refrigerate for a 2 hours, slice into bars and store in fridge in an airtight container for 2 weeks or in the freezer for three months Immunity Cubes: -2 lemons -1 thumb of turmeric -2 thumbs of ginger -dash of cayenne powder (optional) -1 tsp black pepper (don’t skip!) -1 cup water -wash lemons, ginger, and turmeric well, chop and add to a blender along with the other ingredients -blend until well combined, using a mesh strainer, strain liquids into a bowl -pour into ice cube tray and place in freezer, store in freezer up to 3 months Let me know if you try any of these recipes!💚
