In a large skillet or Dutch oven, melt the butter over medium-high heat. Add the seasoned chuck roast and sear it on all sides until browned, about 3-4 minutes per side. Remove the roast from the skillet and set in the crockpot.  In the same skillet, add the sliced onion and minced garlic and cook for another 1-2 minutes until fragrant. Pour in the Worcestershire sauce and beer, scraping up any browned bits from the bottom of the skillet. Stir in the Au Jus mix.  Transfer everything to a slow cooker. Pour the beef broth over all. Place lid on slow cooker. Cook on low for 7-8 hours or until the meat is tender and easily shredded. Once the roast is cooked, remove it from the cooking liquid and shred it using two forks. Return the shredded meat to the cooking liquid to keep it moist and flavorful. Preheat your oven’s broiler. Split the sub rolls and place them on a baking sheet. Put those under the broiler for about 1 min. Pile the shredded beef onto each roll and top with slices of provolone cheese. Place the subs under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Use a strainer to get all the chunks out of the remained juices in the crockpot (which is the Au Ju).
