Homemade Nutella Do you have a bowl of in-shell mixed nuts leftover from the holidays? Let’s put those to good use! In 15 minutes you’ll have an incredible, vegan homemade Nutella! Ingredients: 2 C Hazelnuts, shelled 1/4 Cup Date Sugar* 1/4 Cup Powdered Cacao 2 Tbsp Grapeseed Oil** 1/2 Tsp Vanilla Extract *I use date sugar because I like the texture, flavor, and glycemic index! However, any sugar you’d like to use will work here! ** Swap with any neutral oil you have on hand. Preheat your oven to 400° F (205° C) Roast the shelled hazelnuts (dry- no oil) on an unlined baking sheet for 5-6 minutes until the nuts turn slightly more brown. Let cool enough to handle and remove as much as the skins as possible with either your fingers or rubbing the hazelnuts in a kitchen towel. Add nuts to a high speed blender (I’m using a @vitamix) or a food processor, process until nuts are broken down then add grapeseed oil. Blend until combined. Add in cacao, date sugar, and vanilla and then blend until completely smooth. Transfer to an airtight container and store on the counter for up to two weeks or in the fridge for up to two months! Don’t forget to toss the shells into your compost bin, the garden, or even use them in houseplants for drainage!
