@Bre Giglio was craving cinnamon sugar donuts so let’s make them gluten, lactose, and egg free Ingredients: - 2½ tsp active dry yeast - 2 Tbsp warm water - 1/2 tsp granulated sugar - 3 cups @Caputo Flour gluten free flour - 1 cup @fairlife whole milk, warmed - 1/2 stick of butter, room temperature - 6 tbsp cornstarch, plus 9 tbsp lukewarm water - 2tsp granulated sugar - 1/4 tsp kosher salt Recipe: 1. Add yeast, warm water, and granulated sugar to a bowl. Let sit for 10 minutes, or until the yeast mixture is foaming. 2. Add the remaining ingredients into the yeast mixture and stir with a bread hook on a stand mixer. I prefer adding wet ingredients first. 3. Once the dough is tacky but well integrated (takes about 10 mins), move it to a buttered bowl. I find heat makes a difference with the rise, so putting it in your oven on the bread proof setting can really help here. 4. After 2 hours, cut the dough into your shape of choice (I went for donut holes). Place on parchment paper, cover and let rise for another hour. 5. Heat at least 1.5 inches of oil to 350 degrees. Temperature is very important here, so be sure to have a stable 350 before adding the dough in. Let fry until golden brown and remove. 6. Combine 1 cup of sugar with 4oz of melted butter and 1tsp of cinnamon. Mix and coat donuts. Keep some as a dipping sauce and enjoy!
